This is the best chili I have ever eaten! More-so, this is the only chili my finicky wife has ever eaten, and she's a plain grilled chicken, white rice, and unseasoned green beans kind of gal. Simply wonderful!
Here's my changes: I fried 4 pieces of bacon , crumbled them into the pot, and then saved some of the fat to saute the garlic, celery, and onions. I used one can of chili beans, one can of dark kidney beans, and one can of black beans- all drained. I used one can of the Chili beans with medium sauce (think the brand with Duke the dog). I could only find spiced Italian sausage so I chose a mild spice. This is why I didn't use the chili beans in spicy sauce but it was perfect! I was fretting using the 1/4 cup of chili powder but don't fret! It all worked out in the end. FYI, an Anaheim pepper is a chili pepper, and after humming and hawing, I finally figured it out. I followed the remaining recipe exactly recipe with cooking, ingredients, and measurements, and then let it settle overnight in the fridge. WOW! I had it the day of and then the day after, the best got better!
Two tips, get more Frito's and use the biggest pot you have. I have a cast iron dutch oven and that did the trick. I also had a can of pineapple ready for pureeing in case the chili was too spicy but never needed it. It was just enough kick to let you know you had a flavor explosion in your mouth.
