Dutch Oven Mountain Man Breakfast

I have made this several times. It is a great way to feed a large crowd when camping or doing outdoor activities. I found that the type of sausage you use has a big impact on the taste of the breakfast. For the first batch I used a maple and honey breakfast sausage. It was a little too sweet for my taste (personal preference!). The next batch I used a hot Italian sausage which was much more to my liking.

West Indian Curried Chicken

A very tasty chicken curry that was quick and easy to make! I'll definitely be making this again. I overcooked the potatoes but I won't make that mistake again. I also cut down on the salt and added a little extra curry to give it a little more bite.

Mulligatawny Soup I

I really enjoyed this soup! It was exactly what I was looking for and I will be making it again. It was very easy to make. Next time I will use a hot curry. Next time I will probably grate the apple.

Coleslaw

I’ve been looking for a coleslaw recipe that didn’t use mayo and this one fit the bill perfectly. It is quick and easy to make and has a light refreshing taste. I like a dressing with a little bite so I only used 1/2 the sugar. Next time I will use even less as it was still a little too sweet for my taste. I also pre-mixed all the dressing ingredients and then poured it over the salad.

Guacamole

For me; guacamole has always been a bland topping. This recipe changed my opinion! The stuff is awesome. Very easy to make and very delicious! I plan to use this in the “Seven Layer Tex Mex Dip” by Ginny.

Refried Beans Without the Refry

Great beans! It is a very easy recipe. I made them as is except I upped the garlic a little. Next time I would use a whole fresh jalapeno with the seeds in. I think that would add a little more spice, plus I love the taste of fresh jalapeno! I plan to use this in the “Seven Layer Tex Mex Dip” by Ginny.

Cabbage Roll Soup

I really enjoyed this soup! It taste just like cabbage rolls and is very hearty and filling. I agree with the serving suggestions but I would say it is more like 10 to 12 servings because it is so thick and filling. I found it almost too thick and I would add a little more water next time to give it more of a soup texture. It is a great recipe and I will definitely be making it again.

Fluffy Pancakes

We always use the box batter but I thought I’d change it up a bit. This recipe looked promising so we gave it a try. The batter was very easy to mix up and it made delicious pancakes! The best part is the ingredients are such that you always have them on hand. The next time I will add a little vanilla.

Blooming Onion and Dipping Sauce

This is an authentic recipe and produces a Bloomin’ Onion that rivals any restaurant version! The sauce alone is amazing and can be used for so many things! I left the bottom of the onion on and did not remove the core. I use the hard bottom and core to stick a fork into so I have a handle. This helps when dipping the onion in the hot water and in the batter.

Marylyn's Cheese Blintzes

This was a stretch for my level of cooking but I really enjoyed the learning process! I had never made crepes before and it took a little practice to get them to come out right. The trick I found was to use a VERY lightly buttered / oiled pan. I couldn’t find farmers cheese so I used unripened goats milk cheese. It has the same consistency as farmers cheese but as it turns out it is a little more tart. If using this cheese again I’d add a little more sugar to compensate. With everything made I was now ready to roll up some blintzes! I had a tough time getting them to stay together. I googled some blintz images and saw that a lot were made into square pockets instead of rolls. I put a dab of filling in the middle of the crepe, folded the sides in and then folded in the top and bottom. I found it much easier than rolling and it stayed together a lot better, plus I could get a lot more filling in them this way! I tried frying a couple up right away but this was a mistake. They flopped open in the pan. I let the others sit for a bit and they firmed up nicely and were much easier to fry. All in all a great recipe and the end product was delicious. I’ll definitely be making this again!

Basic Crepes

I had never made crepes before and it took a little practice to get them to come out right. The trick I found was to use a VERY lightly oiled pan (as stated in the instructions!). It also took a few tries to get the right amount of batter in the skillet. It didn't take long and I was turning out beautiful crepes! This a a great recipe and I ended up making a quadruple batch!

Great recipe! Quick and easy! I made one batch as is and it but with extra garlic and it was excellent. It is a great base to get creative with. I made a second batch with fresh chopped jalapeños and cumin!

Grilled Bacon Jalapeno Wraps

These are delicious! The grilled bacon flavor was fantastic!! I’ve tried several oven versions of poppers and the taste you get from the BBQ is way better! I would recommend freezing them first as the cheese does tend to leak out. However, I did find the filling a little bland. For my second batch I mixed the cream cheese with cooked hot sausage meat and it really brought the poppers to life.

Delicious! A party hit! The filling is very tasty. I did some in the oven and some on the BBQ. The BBQ gives the bacon a delicious flavor and browns it up nicely!

Sausage Jalapeno Poppers

his weekend I went on a quest to find the perfect popper. I cooked up several different batches for a party and this was the favorite stuffing. The sausage gives the filling a firmer texture and a delicious taste! I did some of these in the oven and some on the BBQ. I high recommend the BBQed version! The BBQ gives the bacon a delicious flavor and really makes these “pop”!

Seven Layer Tex Mex Dip

I made this for a party and it was a big hit! It is the best nacho dip I have ever had. I used the “Refried Beans Without the Refry” recipe from this site as well as the ” Guacamole” by Bob Cody and the “Taco Seasoning I” recipe. All these together created a dynamite nacho dip! I served the olives on the side as not everybody likes olives.

Curried Coconut Chicken

I really enjoyed this dish! It is easy to make and tastes really good! My wife who is not a curry fan really liked it! It is a great starter recipe which is exactly what I was looking for. It did make a really runny sauce but most dishes I’ve had at Indian restaurants had a similar consistency.
