Roasted Yam and Kale Salad

This is excellent! I served it warm, and left out the red wine vinegar. I have just discovered kale and the sweetness of the yams is a great compliment to the taste. Makes a really nice side dish.

This is very, very good! I cut the recipe in half since there is just 2 of us and now I wish I wouldn't have! I did add extra cumin and red pepper flakes to spice it up. Thanks for sharing the recipe!

Pizza Without the Red Sauce

This is EXCELLENT! We eat pizza about once a week and this was a wonderful change! The only change I made was to double to sauce mixture for a large boboli. Thanks for the recipe!

Broccoli and Sausage Cavatelli

I added onion and mushrooms and used turkey kielbasa to cut out the fat. My husband loved it and asked that I make it more often! I love that it's fast and I have dinner on the table in less than an hour.

Pumpkin Bread IV

AWESOME. I found this recipe right before Christmas and have made several loaves of it to share. My only regret is that I didn't have more bread pans to make is easier to make more at once! This is going to be a holiday favorite in my family. Thank you so much for sharing this wonderful recipe!

Tangy Slow Cooker Pork Roast

This is SOOOO yummy, and my husband, LOVED this! The meat just fell apart! Definitely a keeper for our family menu. I triple the sauce and added corn starch at the end to make gravy. I also used brown sugar and only used 1/4 c. I used balsamic vinegar instead of red wine vinegar and substituted barbeque sauce for the ketchup.

Lentil Soup

EXCELLENT! I omitted the spinach, used chicken broth instead of water and added about 1 tablespoon of curry powder. I did have to add more water since the lentils soaked up most of the broth. A wonderful, filling meal!

Nana's Apple Crisp

WONDERFUL! I used this recipe with fresh peaches and it was perfect! I did use 1/2 c sugar, 1/2 c brown sugar and I used 1/2 c. oats and 1/2 c. granola that was sweetened. This will be made again and again, especially since it is so simple to prepare!

Old Fashioned Peach Cobbler

This recipe was AWESOME!!! I can't believe how easy it was to make, I have never made a homemade cobbler or pie. I did reduce the sugar by 1/2 cup and I doubled the cornstarch. The peach mixture was still VERY watery, so I just spooned the peached out into the pan and added what I thought would be enough juice. Rolling out the dough was a challenge, but I think if I had made more, it may have been too thick and it would have have cooked as well on the bottom of the pan. Great recipe, thank you!!!

American Lasagna

This is an excellent traditional lasagna recipe. I did have to add a little tomato sauce to the meat sauce because it seemed a little dry. I used crushed tomatoes instead of diced tomatoes as well. I agree that more ricotta is needed, but my husband LOVED this, I will be making it again!

Chicken Tortilla Soup I

This was AWESOME! I liked that the soup was loaded with ingredients so that it was more filling for my husband. I used two cans of broth (not condensed) and one can of cream of chicken soup. I will use diced tomatoes next time instead of crushed, I don't know if it was the brand I used, but it was basically tomato sauce. I also omitted the oregano and used cumin as a lot of others suggested here. This will definitely be a regular in my home!

Antipasto Salad

Chicken Tetrazzini for a Crowd

Lois, this is SOOOOOOO yummy!!!! Thank you for sharing it! My husband can't eat the tetrazini with sour cream in it and this is terrific. I split the recipe in half and used egg noodles. I also used cream of chicken soup instead of mushroom, and sauteed onion with the mushrooms. This was a hit at home and will definitely be added to our menu!
