To Die For Blueberry Muffins

Added the zest of a lemon and a tsp of vanilla extract. Used almond milk instead. I don't know if I measured incorrectly but my batter was very thick-almost dough like so I just poured a little bit more almond milk to thin out the batter a bit. I used soft room temp butter for the topping and it was not as crumbly as it was suppose to be. Next time I'm going to use cold butter and "cut it" into small pea like consistency like how I normally do for crumbles. Poured the batter to the top of my muffin tin and it overflowed a bit but when cooked and cooled it looked really nice :)

Todd's Famous Blueberry Pancakes

Great easy recipe. I used almond milk instead of regular milk. Added 1 tsp of vanilla extract, 1 cup of white granulated sugar, 1/4 of brown sugar, zest of 1/2 a lemon, and 1 tsp of cinnamon! Made it this morning for my boyfriend for Valentines day and he loved it! Didn't need any syrup at all.
