Chocolate Covered Caramels

This recipe was incredibly frustrating - after reading every SINGLE review and hoping that my first time making caramels would be as wonderful as everyone else's experience, this was an epic disaster. I followed the recipe exactly, brought the caramel mix up to 244 degees, and let it set in a well greased pan for hours...even in the fridge for several hours. It was not too difficult to get the big square of caramel out of the pan, but once out, it immediately started melting so the "squares" did not stay. I lumped it together and tried to make caramel balls, but these melted down too. Trying to brush chocolate on the caramels (even while taking them in and out of the fridge) was messy and frustrating, and in the end, I am just frustrated with the attempt. They were supposed to be a creative fun alternative to Valentine's chocolate for my husband and they just look like a failed attempt. He says they taste good, but they look awful!
