Rum or Bourbon Balls
I got rave reviews on these and will make again! I doubled the recipe, using the same measurements as below, except instead of 5 cups of vanilla wafers i used 1 whole box (finely ground in the blender, i think it equaled about 3.5 cups) and only 2/3cup of Makers Mark bourbon, and no nuts. I served these after one day they were made, but def. thought the bourbon was stronger after setting/ soaking. A box of these would be a very nice gift.

Butternut Squash Soup
i like this soup, but do think it has something missing. i added some nutmeg and cinnamon per other posters, and it livened up a little. and be careful with the onion, i its flavor almost overpowers the soup. however, i think some flavored, herb bread dipped in it will be perfect!! but certianly a beautiful soup because of the deep orange color. add some sour cream swirls and some greenery, and you have beautiful dish!!

Cajun Chicken Pasta
absolutely fabulous and a beautiful dish as well. even good cold the next day. I added a more seasonings to the sauce (to my taste) and used evaporated milk and cornstarch as the base. like other reviewers mentioned, the sauce thickened up once i turned of the heat and added the pasta. therefore, if using cornstarch, give the dish a few minutes to "rest" before serving. Great sauce, wonderful for bread dipping! Thanks!
