Horsey Eggs

I've also made this simple deviled egg recipe (with 30 eggs!) for years using fresh mayo & horseradish. The recipe earned me the nickname "queen of the deviled eggs". I usually top them with green dill weed but for Christmas, I sprinkle them with the green dill weed & smoked red paprika which makes them very festive and delicious! Always a hit and not an egg left over...

Super Easy Stir-Fried Cabbage

This recipe is almost exactly the way my mother showed me how to stir fry cabbage except she adds a bit of grated ginger and 2 crushed red peppers when adding the garlic to the oil. Mmm-mmm-good!

Eggplant Parmesan For the Slow Cooker

I made this for dinner this evening and it was a hit. I cook for a picky 16 year-old who hates most vegetables and loved this so much she wants to make a "sloppy joe" sandwich out of the leftovers for lunch tomorrow. I followed the recipe exactly for 4 servings. Great recipe and will definitely cook it again!

Salmon Dip

This is the most awesome salmon dip recipe! I've made this several times as is and the recipe is just great. I tweaked it once with 7 oz. of fresh salmon cooked in garlic butter and 2 minced, smoked chipotle peppers...WoW! Mmmm-Mmmm, good!

I made this for lunch today for the second time today. Delish as is, but this time I added a few dashes of powdered mustard, 1 large grated garlic clove, and a dash of salt. Mmm-mmm good!

Quick and Easy Mexican Pizza

This is a great recipe for a quick snack or meal. I made 5 pizzas in total for 2 people. First, I made two pizzas (one without frying the tortilla and one with the fried tortilla) just to compare both. I topped them with seasoned tomato sauce, cheese and spinach. I preferred the fried tortilla because it made a crispier crust. The other tasted too much like a regular, warmed-up burrito. I was able to get quite creative with toppings using the tasty leftovers (sauce & chicken) from the Slow Cooker Chipotle Chicken recipe on this site. I just spread some of the leftover chipotle sauce over the fried tortilla, topped it with cheese, shredded chicken, more cheese and baked it for 7 minutes. One of the best little pizzas I've ever made! P.S. I did not use 2 cups of oil to fry my tortillas as 1 cup of oil was enough to completely cover the bottom of my frying pan and fry them evenly.

Fresh Asparagus Soup

This soup was absolutely delicious. I substituted coconut milk for regular milk and soy sour cream for regular to make it vegan. It was fabulous! Thanks for such a great recipe.

Slow Cooked Chipotle Chicken

This was excellent. I sautéed the onions in 3 tbs of butter instead of oil and added 5 cloves of crushed garlic instead of 2. I also used 3 chipotle peppers instead of 2. The result was a delicious, spicy, creamy sauce like no other sauce I've ever made before. Great recipe!

Slow Cooker Baby Back Ribs

I have made these slow cooker ribs 4 times now and they are a HIT with a picky 16 year-old who now requests them every week! I season them with garlic powder and a touch of ground cinnamon (not too much) in addition to the salt and pepper. I have some good tips for coating the ribs with the barbecue sauce before putting them into the oven. I place about half the bottle of barbecue sauce in an oblong, plastic bowl and thin out the sauce with about 1/4 cup of water---not too runny, though (use a little bit of water at a time). Using tongs, I then place one portion of ribs into the sauce bowl to coat them with sauce one portion at a time (I always cut my rack of ribs into 2 or 3 rib portions before seasoning and cooking them in the crock pot). Using the tongs, I carefully slide each portion around the sauce bowl and a spoon to baste hard to reach areas with sauce to make sure it is very well coated. I then place the portion onto a foil-lined baking pan (makes for easier clean up). They always come out great! Thanks for such a wonderful recipe. :)

Spicy Chipotle Turkey Burgers

I followed this recipe exactly except for 4 basic things: I used 1.5 lbs of 70% lean ground beef instead of 1 lb of turkey, 2 chipotle peppers instead of 1, 1 teaspoon of ground cinnamon instead of cilantro, and cooked the patties in a frying pan (without any cooking oil) instead of cooking them the girl. I topped them with cheese (asadero & cheddar) immediately after they were cooked and covered them in the pan so the cheese would melt. After the cheese melted, I put them on top of a paper-towelled plate to rest before placing them on toasted buns (VERY important to collect excess grease so they don't ruin the buns). Mmmm, good! They were a hit, and I have to cook for a picky 16 year-old who devoured them and said they were good. What a great recipe! Thanks. :)
