Thai Green Curry Chicken
AMAZING!!! It tasted just like the green curry we get at our local Thai restaurants. We left out the soy sauce because we really try to avoid MSG, and we left out the fish sauce. I also forgot to get fresh ginger, so I used 1/4 tsp of ground ginger since I had that laying around the house. We also added a can of bamboo shoots (drained) and some fresh basil. YUM!!!

Penne and Vodka Sauce
I sauted two cloves of garlic (minced) in the butter, and didn't use the Pancetta. It was so delicious. I can't get enough! The sauce freezes really well (and reheats in the microwave), so you can always have some ready. My only mistake was not doubling the recipe so I had more available.

Swedish Meatballs (Svenska Kottbullar)
I made this without the optional ingredients. IT WAS PHENOMENAL!!! The meatballs are fantastic. The gravy was great, though I will probably use a little less sour cream next time. Once it was finished, we split it into individual serving containers and froze it (without the noodles, so we could take them for lunches at work. My husband hates frozen meals, and he hates leftovers, but he can't get enough of these. I just make fresh noodles the night before, and it's a perfect lunch!
