About this Cook
I was recently married, September 2, 2007, and am loving learning to be a good wife!! I try to cook as often as I can, but have quite a fast paced life right now and only get to do it once a week or so.
My favorite things to cook
I love to cook anything with PASTA! My fav!!! I use mostly chicken, as it's a healthier alternative, but I'm sure my husband would prefer I use more red meat! I've recently starting to experiment a little with roasts and fish and I love it! It's fun expanding...my recipe box and not my waistline of course!
My favorite family cooking traditions
We have a baking day every year for Christmas! We make little platters for all the neighbors and our friends and family!
My cooking triumphs
I make a mean Carrot Cake with from scratch Cream Cheese frosting!!!
My cooking tragedies
I haven't screwed anything up too badly, yet :) although I do tend to forget the bread when I warm it in the oven...oops!

Clone of a Cinnabon
Yumm! These were so good and such a hit with the fam! One note: make sure to make these in a 9x12 brownie pan so they stay together and moist. Remove from pan and seperate right away otherwise you'll have the ugliest, but most delish cinn rolls ever :)

Chicken Marsala
Yumm, yumm, yumm! I did it just slightly different: I left out the Sherry and used only Marsala; I used 2 whole packages of mushrooms to cram extra veggies in there; I skipped dredging the chicken in flour and instead just sprinkled with salt, pepper and oregano on the chicken itself before adding to the pan; I also removed some of the wine sauce while it was cooking, mixed in a little bit of flour to thicken it and mixed it back in the rest...thickened up perfectly and was delish served over spaghetti. I'll definitely make again!

Three-Cheese Potatoes
This turned out really yummy!!! I did have to make a couple of changes: I only had small red potatoes on hand, but they added a nice flavor; I didn't have chives, so I left them out; and, lastly, I LOVE romano cheese so I substituted that for the parm and used about 1/4 cup (instead of the 3 tbs). Ultimately, the flavor was delish and the Hubs loved it too :o) Thanks!
