Orzo with Parmesan and Basil
Outstanding. I fussed with Risotto forever... never again. Just use this recipe. It's faster, less temperamental. It can be expensive and hard to find basil in the midwest, so I substitute fresh spinach. I also add cooked, finely chopped chicken to make a great lunch to serve with a salad. An inexpensive way to make an easy dish out of stuff you should have on hand! My favorite kind of recipe.

All-Star Apple Pie
Not bad at all for a 15 minute pie. I followed the recipe exactly. Only problem I could find is that there isn't nearly enough apples. Use a deep dish pie pan and double the apple pie filling and the cinnamon. The crumb topping is worthy of even the best homemade fruit pies. It's really good. If you can stand coconut at all, try to leave it in the recipe. It adds a unique crunchy taste to the pie that keeps things interesting. Definitely worth making when you're in a pinch for a dessert.

Shrimp Lemon Pepper Linguini
This is one of my boyfriend's favorite recipes. For him to comment is a big deal... he'll eat gravel and not notice. Make sure you double the sauce, half the pepper, and I used lemon pepper flavored linguini (American Italian Pasta Company). One of my favorites.
