This is another recipe that I was looking forward to making. The week was just full of them wasn’t it? I used the largest pot I had and still had a hard time fitting all of those noodles in the water. The sauce and veggies came together nicely as well
as the massive amount of cheese.
I began layering and quickly realized that I had made too many noodles. No biggie, I like it noodly. The cheese had to be put on with my fingers to get it perfect, so my hands were a mess by the end. We even made a tiny side Lasagna with all of the leftover
goodies that wouldn’t fit into the big one. The oven timing was perfect, and we had lasagna in less than 2 hours.
Lasagna is one of my favorite things, but I rarely like it in a restaurant. The sauce is too sweet or something. I don’t know. But this was perfect. All but my oldest loved it. We had my niece over for a visit, and she gobbled up the leftovers (even the
mushrooms). So it was a hit.
This week I learned to read the reviews not just rely on the stars. I also learned that giving a recipe a second chance can mean victory. I can’t call this week a total win, but I still think I progressed. And that is what I’m here to do.
