Brown Sugar Meatloaf

This is a tasty loaf. My husband really likes this recipe. He request it every week. He also insists that I make double the recipe so he can have meatloaf sandwiches for lunch for the week. Needless to say it is a well used recipe in our household.

Southwestern Egg Rolls

This was a hit at the New Year Party, and my family really enjoyed it. I made a few small changes. I added cilantro to the mixture, and I rolled them in wonton wrappers. I also used a more healthier oil in which to fry them in. I choose to fry any foods in canola, soy, and olive oils. They are better for the body than vegetable oil.

Delicious Ham and Potato Soup

Easy and simple to make. I added fresh corn the last 5 minutes. It turned out excellent. My son asked for seconds, and my husband who was skeptical about the dish, said that he was pleasantly surprised.

Fried Chicken with Creamy Gravy

This was by far the best fried chicken I've had in a really long time. The gravy was money. The absolute best. I will be utilizing this recipe more often. I made a slight modification though. I marinated the chicken in a mixture of buttermilk (2 cups), 2tsp minced garlic, and 1/8 cup hot pepper sauce for up to 7 hours, but if time is an issue try to marinate at least for 2 hours. My family loved the gravy as much as I did. This recipe is a must have.

Split Pea Soup

My family really enjoyed this varation of split pea soup. I am a fan of marjoram so I was interested in trying it in split pea soup. I was please to say the least. I had to substitute smoked bacon in place of the ham bone. I cooked the bacon with onions just until the bacon was slightly crisp and the onions began to carmalize. I believe that added a great smoky sweet flavor to the soup. My son loves split pea soup. He often eats the condensed canned version, and was like, "Mom, this is way better than canned soup. Make this kind from now on."

Central American Tacos

My family loves to have dishes that have tomatillo sauce in them. However, this dish was very bland. I agree with another reviewer about the amount of potato was too much. I put in just 2 medium size and it was too much. It was more like having potato tacos, but without flavor. I have made breakfast tacos with tomatillo and potatoes that had better flavor. The recipe was that horrible, I just had high expectations for this recipe.

Famous Butter Chicken

This was a very quick, simple and suprisingly delicious. Considering the amount of effort needed to make this dish, it's surprising how moist the chicken was. I substituted chicken tenderloins instead of breasts and reduce the time to 25 minutes. My family loved it, therefore it will a regular meal at our dinner table.
