Spicy Shredded Beef

this recipe has been such a joy! i have a lot to say... 1. it is not that spicy even tho it's called "spicy shredded beef" so if you want spicy add hot sauce 2. definately don't over use the cumin...the called for amount is plenty. 3. i added 1/3 cup of sugar when i added the tomato sauce. this gave a hint of sweetness to the meat that was just divine 4. do be sure to add water as it cooks so it never gets dry. 5. cook for at least 2 hours...the longer the better and make sure you have a very tight fitting lid to keep moisture in i use this beef for so many things but a favorite in our home is the mexican dish machaca con huevo first i heat up a few tbsp of veg. oil then add sliced onion. cook this for a few minutes then add the shredded beef. simmer for 10 minutes. then add scrambled egg (the ratio of egg to beef is up to you but usually 1 egg per serving of beef is good) cook the scrambled egg with the beef for at least 10 minutes until the egg is fully cooked. serve with warm corn tortillas. this is to die for delicious! i highly recommend this recipe for so many things (tacos/enchiladas/machaca/burritos) it's just divine and so so simple

Sesame Pasta Chicken Salad

devine! i also reduced the oil amount and used olive oil instead, as others suggested. i added shredded carrot and shredded cabbage and chopped celery and skipped the cilantro and green onion (just didnt have any in the house) this is absolutely DEVINE. used chopped up leftover turkey from easter dinner! YUM YUM GIMME SOME!

Six Can Chicken Tortilla Soup

what a joy this was! i doubled the recipe and subbed one can of corn for creamed corn and also one can of chicken stock was replaced with cream of chicken soup (with one can of water). i added a can of diced green chili's and some frozen veggies. topped with cheese and sour cream. also, i fried up some strips of corn tortillas in a little olive oil until crispy and golden and put them in the bottom of a soup mug and topped with the soup. this really is absolutely delicious! i did spice with a little cumin and dried basil and chili powder. thanks for the recipe!

Easy Skillet Chicken a la King

oh boy this is a keeper! i threw this together in NO TIME (i mean less than 15 minutes!!) i did do a few changes... 1. i used frozen mixed veggies instead of mushrooms. i just added them with the soup and let it simmer to cook them thru. 2. i used much less than 1 cup milk because i wanted to sauce to be thicker. 3. i added diced red onion to the dish...cooked the onions down with the chicken so they'd be translucent and a bit sweet. 4. i baked up refridgerator biscuits to put the mixture on top of. overall it was absolutely delicious and what i loved best was just how easy it was to assemble. a quick and yummy dish for those nights when we're tired!

Tossed Romaine and Orange Salad

this was a good salad with a light, refreshing flavor. very easy to put together. i used rasberry vinegar bc i had it on hand and read some of the reviews saying the dressing was a bit bland...it made for a nice flavor. i also diced some red onion very fine and added that to the dressing. also, i toasted the slivered almonds before adding to the salad. overall was delicious. i will make this again.

Broccoli Salad I

omigoodness MAKE THIS RECIPE! it is to die for delicious!! and it only has to chill for maybe 30-45 min. before it's sufficiently delicious ( i was worried it would take forever to soften the raw broccoli but not at all) this is a major favorite.....YUM!!!!

Spaghetti Pie II

this was delicious!!! i added 1/2 a can of chopped jalapenos to give it a little "kick"! it was AWESOME!!!! i also used monterey jack cheese instead of mozzerella but only bc it was all i had. YUMM YUMM cant wait to eat the leftovers tomorrow!
