Good Old Fashioned Pancakes

Oh my!!! My pancakes turned out light, fluffy and so very good. The only changes I made was I added 2 TBS of dried buttermilk, an extra 1/2 tsp of baking powder and a tsp of vanilla. This recipe is a keeper.

Cranberry Pistachio Biscotti

Wonderful! I didn't have any almond extract so I skipped it. I also added some orange zest. My husband said it was the best biscotti he's ever had.

Pilgrim Pumpkin Pie

Wow! This pie is good! My family doesn't really like pumpkin pie, but I thought I would try to make on from a pumpkin that was given to me from a friend. My family ate the whole pie in one day! I used all the honey and I added about a 1/4 cup of brown sugar, otherwise I followed the recipe to the letter.

Honey Wheat Bread I

Wonderful taste and texture. It did seem a little to wet to begin with, but as I kneaded the bread adding flour to keep it from sticking it came together. It was an excellent bread.

Spinach Chicken Parmesan

I really like this dish. I do agree with other reviewers that the chicken is bland by itself but if you leave the spinach on the chicken and eat them together to get the full flavor combo it is wonderful. Very easy to put together.

Big Ed's Cajun Shrimp Soup

This was very good and I will make this again. The only things I changed was to use low sodium V8 and I used chicken broth in place of clam juice. I also tossed in about a cup of sliced okra.

Blue Cheese Beef Tenderloin

Fresh Southern Peach Cobbler

This was wonderful cobbler. I used fresh nutmeg and I only had 6 fresh peaches. I used more boiling water to thin the topping down some so that it was easier to spread all the way across the top. Turned outjust like my grandmother made. Thanks for the recipe Amy.

Florentine Artichoke Dip

Yummy! I made it for my parents 50th annv. party and it was the first the thing ate. Only changes I made was to add a 1/2 cup of sour cream, some cracked black pepper and a few drops of hot sauce. I said once and I'll say it again YUMMY!

Peanut Butter Pie I

OH MY GOSH! What a pie. This pie will make a puppy pull a train it's that good. I used an Oreo pie crust and put a layer of milk chocolate on the bottom of the crust then put the filling on top of that. I topped with chocolate syrup in lattice pattern. I make 2 pies for a church dinner and got rave reviews.

Italian-Style Spaghetti Squash

This was my first experience with spaghetti squash and I don't think I nuked long enough. I really didn't care for the texture, however my husband and 2 of the kids loved it. I did add some italian sausage and mushrooms.

Herbed Turkey Breast

Very good. I have used this recipe before with chicken only difference is the chicken recipe also calls for rosemary. I think this recipe would have been better with rosemary also. But all in all a good recipe for turkey.

Shredded Brussels Sprouts

Very tasty, but kind of labor intensive for sprouts. I didn't have pine nuts and I used turkey bacon. I like brussel sprouts but my husband and kids don't like them. Hubby was pleasantly suprised and liked the recipe. I thought that this recipes would trick the kids and they would not know they were eating brussel sprouts. Guess there is no tricking those crafty kids, they just turned their little noses up.

Smoked Salmon and Egg Salad

Just so so. I used hickory smoked tuna in the place of smoked salmon and red onion for color. I'm not the biggest fan of egg salad so that may be reason for my lukewarm rating. However I do think the idea by another reviewer to put in pastry cups for a party or shower is a good use for this recipe and a nice change from the ordinary.

Baked Ziti I

Easy, easy easy! The taste was very good and very little effort required. My kids think they might like this better than lasgna. I used Italian suausage and ground beef with Classico tomato and basil sauce. I also used fat-free sour cream (since that is what I has on hand) and real parm. cheese. I also tossed in a few finely chopped roasted red peppers in the sauce.

Cream Cheese Pound Cake I

Very moist dense pound cake. Just what a pound cake should be. I have made this cake several times and it always turnes out well. I have added toasted peacans & chocolate chips before and it was a hit with the kids.

Slow Cooker Italian Beef for Sandwiches

Very good. I served with sauted fresh mushrooms and onions on toasted rolls topped with provalone cheese. Even my picky 4 yr old said yummy. Thanks for the great recipe Maureen.
