Split Pea Soup with Tofu

Hearty and delicious! We added extra red potatoes and needed to cook the soup longer than two hours to ensure that the peas and potatoes were done. This soup is a keeper for vegetarians and meat eaters alike!

Yummy Sweet Potato Casserole

Great dish. The pecan, brown sugar, and butter topping really makes the dish. I would recommend adding more than 4 cups of sweet potatoes though.

Pumpkin Gingerbread

Very tasty. I made a nine inch loaf pan, a small (4 in loaf pan) and 12 muffins out of the recipe. For half of the recipe, I added craisins and pecans and the other half I used raisins and pecans. Both were great additions. Great as bread or as breakfast muffins. The muffins needed to cook only for about 30 minutes.

Pumpkin Bread IV

Excellent. Moist and delicious. I added about a cup of raisins and chopped pecans. I took this bread to work and my co workers loved it even a co worker that doesn't like pumpkin. She said it reminded her of zucchini bread. Another keeper!

Chocolate Lovers' Favorite Cake

Yum Yum!! Chocolaty and moist. A real keeper. I used two 9 in baking pans instead of a bundt and it turned out great! This will be a mainstay of my dessert recipes.

Owen's Veggie Stir-Fry

Delicious and healthy! We served atop white rice. We added snap peas, broccoli, squash, water chesnuts, and marinated tofu and it turned out great. Don't overcook the veggies so they will be slightly crisp. We made the dish again and added soy chicken strips and it was wonderful. Will make again and again!

Creamy Corn Chowder

I loved this soup and I'm giving it 5 stars despite the fact that I thought 1 tablespoon of crushed red pepper flakes was too hot and overpowering. Next time I will use about 1 TEASPOON of flakes or less. However, the consistency of the soup was great. Thick and creamy. I loved all the veggies in it. The best part of the soup was how healthy it was, too. Great recipe!!

Chewy Chocolate Cookies I

Five star cookie! Chewy and moist with a great chocolate taste. Chocolate lovers will love these cookies. They tasted almost like a brownie. I used white chocolate chips to give a contrast between the dough and the chip. Great recipe.

Oatmeal Peanut Butter Cookies

Delicious! Great texture - moist and chewy with a nice peanut butter flavor. I did half the batch as the recipe stated and the other half I experimented by adding chocolate chips, butterscotch chips, and raisins and they also turned out great. This recipe is a keeper.

Beef Tenderloin With Roasted Shallots
