Pecan Pie V

I used this recipe to make mini pies using the small pie tart crusts. Using half of this recipe, it made seven mini pies. The flavor was amazing, rich and buttery filling that was incredible. The best pecan pie I've had. Next time I use this for mini pies, I will chop the pecans, smaller pieces would work better in the smaller pies.

Marinade for Chicken

Excellent marinade. I used this on chicken thighs that I baked in the oven and they came out great, I will definitely use this again on chicken breasts.

Mediterranean Kale

Great way to prepare kale, thanks for the recipe! The only thing I would adjust is use low sodium soy sauce and I did not add extra salt, it was a little salty for my taste but delicious.

Carrot Oatmeal Muffins

I also modified this recipe by not adding the cream cheese filling. I did make some substitutions after reading the review, like using less sugar (1/2 cup brown and 1/2 cup splenda baking substitute) and substituting some of the 3/4 of the oil with apple sauce. I also used Craisins instead of raisings. This recipe, as the poster suggested would be great with substituting what you have on hand. I did use the pineapple, carrots, Craisins, coconut, etc and the end result was a very moist muffin but you really could not taste each individual ingredient so I don't think any one of the fruits added to the flavor but did add to the moistness. Hope that makes sense, in the future I wouldn't go out of my way to get coconut for example if I didn't have it on-hand already and this recipe would still be a great moist muffin.

Whole Wheat Blueberry Pancakes

Very simple recipe and it turned out great! I was out of eggs so I substituted 1/4 cup of applesauce which made my batter thicker I think so I had to add a bit more milk but they still came out really good. The only thing I would change is maybe add a little vanilla and more blueberries to the batter.

Summer Fruit Salad with a Lemon, Honey, and Mint Dressing

What a simple and delicous dressing for fruit salad! I ued fresh fruit I had on hand, blueberries, blackberries, and peaches and followed the dressing recipe as written. Simple yet the flavors melded together beautifully.

Basic Vegetable Stock

This is an easy, great vegetarian stock recipe! I didn't have the fresh thyme so I subbed Italian seasoning, other than that I stuck to the basic recipe and it worked out great. I used a rather larger pot than needed as another reviewer did so the oil/garlic burned a little on the bottom of my pot and but it still worked out OK and the stock is way better than any store bought I've tasted. This will be a great recipe to tweak depending on available ingredients. I can't wait!

Easy Apple-Carrot Coleslaw

I also skipped the salt like a previous reviewer and substituted dill for the celery because I didn't have any. I like a sweeter coleslaw and am trying to cut back on refined sugar so this recipe was perfect!

Roasted Lemon Herb Chicken

The only thing I changed with the recipe is that I put the lemon - olive oil mixture on the chicken first prior to the herb mixture and I used regular salt instead of season salt. The chicken I used only needed about 1 hr 20 minutes in the oven. Excellent, the best roasted chicken I have made to date!

Irish Brown Bread

I made the recipe as stated and it was not cooked all the way through. I read one reviewer who modified the recipe by dividing it into 3 mini loaves, next time I will try that. The flavor of the bread is great and would definately try to make this recipe again with some modifications in the loaf size or baking time.
