Meatball Nirvana

These were excellent, and easy to make! My only concern was that they tasted a bit salty, but I will see what I can do next time I make them to refine that for our family's taste. There will definitely be a next time!

Five Minute Ice Cream

Delicious! I made mine half frozen strawberry and half frozen peach (5 ounces of each). I used my blender, an appliance which I have never felt mastery over. It doesn't seem to like really chopping up big chunky frozen things (like ice, or fruit in this case) and although I added half the amount of the cream at the bottom of the blender before trying to blend the fruit, it still didn't really work perfectly. I had to leave the blade running probably a lot longer than I should have, which melted the ice crystals more and gave me an "ice cream soup" texture, rather than firm scoopable ice cream as shown in the picture. REGARDLESS, this was an excellent, creamy refresher. My kids went gaga over it. I should mention that I started with adding only half of the sugar (1/4 cup) and found that was plenty sweet for us. Your mileage may vary! :) Thanks for a delicious recipe!

Chocolate Cappuccino Cheesecake

Beautiful, delicious, and complex in flavor. I did not use coffee liqueur because I didn't have any. I just used instant espresso powder + hot water for 1/4 cup, and hot freshly-brewed coffee for the other 1/4 cup. The only other changes I made were increasing the crust amount as suggested by other reviewers (I tripled the cookie crumbs and doubled the butter) and exchanging ONE block of cream cheese with neufchatel cheese. My cheesecake cracked during the time it was in the fridge. I recommend slipping a knife between the crust and the pan edges before putting it in the fridge to cool overnight. I think this would have prevented the cracking. Thank you for the fantastic recipe. We enjoyed it for Valentine's Day and have several more slices in the freezer to enjoy over the next few weeks.

Banana Muffins with a Crunch

Excellent! I made it without eggs (only because I didn't have any today--oops!) and it was still great! The texture likely would have been more fluffy with eggs, but I was surprised at how nicely these held together even without. I did sub approximately 1 T of mayo per 1 egg (I halved the recipe). I also substituted applesauce for half the butter. I sprinkled some extra chopped nuts and coconut on the top of each muffin, which made them prettier and added crunch. YUM!! Thanks for this awesome recipe!

Amazing Pork Tenderloin in the Slow Cooker

This is a wonderful, simple recipe. I used a boxed Shiraz/Cab blend that I had in a box on the counter. I could only squeeze 1/2 cup from the bag before it was empty, but it provided wonderful flavor. Like another reviewer, I studded the loin with about 9 cloves or chunks of garlic (in lieu of rubbing pressed garlic on the meat surface), which I removed at the end of cook time before cutting the meat. It added good flavor. After removing the meat, I poured the juices into a sauce pan, simmered them, and stirred in some cornstarch (which I had spooned into a small dish and mixed with some water first to avoid lumps). This quickly thickened the sauce to a lovely brown gravy, which we served over homestyle mashed potatoes (skins on, sour cream and butter mixed in while mashing). My husband and kids LOVED it! Next time, I am going to use low-sodium soy sauce, and consider taking it back to 2 T, because the saltiness was just on the edge of being too much. Also, I have to admit that my meat was a bit tough and dry (the gravy smothered it oh so nicely, so it was fairly easy to ignore), but I think that has more to do with the cut of meat, or the amount of time I left it in (7ish hours on low), than a problem with the recipe. Hot Artichoke and Spinach Dip II

Excellent! It was a huge hit at the party we attended. My preschooler and toddler were devouring it just like everyone else. I didn't have any Romano cheese, so I just doubled up on the Parmesan. I would have loved to use fresh-grated, but I couldn't justify the expense at this time, so I used Kraft shredded (not the powdery kind) and it actually turned out great. I'm sure it would be out of this world with the freshly grated Parmesan and Romano. I also had a hankering to put some Tabasco in it, but we didn't have any. Someone told me they loved how spicy it was, but I didn't think it was spicy at all! (I guess she was tasting the garlic??) Thanks for this great recipe!

Deluxe Waffles

This recipe is really lovely! I just made it a few minutes ago. I love how fluffy the egg whites make the batter. The texture of the cooked waffles is excellent; crispy outside, soft and fluffy inside. The taste is slightly sweet and the color, golden. Thank you for this recipe! Delicious!

Coffee Roast

I made this roast the other night. Perhaps because we drink Starbucks coffee, I found the coffee flavor overpowering in the dish, and did not really care for it. My husband has been eating the leftovers, but I can't really bring myself to do that. I made it with a side of brown rice, which we don't really care for either, so part of my dislike about the roast is actually due to that. I will look for a different roast recipe next time.
