Best Ever Chocolate Cutout Cookies

Reviewed: Dec. 24, 2010
Super delicious and unbelievably easy! The dough seemed a little on the dry side but they turned out perfect. I don't like my cookies overly sweet, so I cut down the sugar to 1 cup and it was just right.

Excellent! I marinated the salmon and baked it all in aluminum foil, so the cleanup was easy!

Fabulous Oatmeal-Bran Cake

Reviewed: Nov. 17, 2005
Moist and light. I substituted the shortening with vanilla yogurt and a tbsp of oil, and it turned out great too.

Pumpkin Gingerbread

Reviewed: Nov. 17, 2005
This is excellent! 3 cups of sugar is too sweet, so I reduced the sugar to 2 cups. Used 3/4 cup vanilla yogurt and 1/4 cup oil to lighten it up, since other reviewers said it was oily - turned out fantastic, and low-fat too! I also added an extra 2 teaspoons of ground ginger to make it more gingery.

Mussels Marinara di Amore

Reviewed: Oct. 31, 2005
This was excellent! I used a few teaspoons of chili oil instead of the red pepper flakes. This is a great recipe because it's so easy.

Oatmeal Pudding Cookies

Reviewed: Apr. 30, 2005
These were very easy and turned out great. Cookies never turn out properly for me, but these turned out great. I subsituted unsweetened applesauce for 90% of the butter and added a little oil. I think the substitution made my cookies more cake-like than regular cookies, but I don't mind that at all. I also cut out the extra 1/4 cup of white sugar and they still turned out quite sweet because of the pudding mix. I like my cookies chewy, so I used slow cooking oats. Great recipe!

Baked Spinach

Reviewed: May 13, 2004
This was excellent! I mixed it all together with other mixed baby greens as well as some minced garlic, sliced onions, mushrooms and bell peppers. I didn't add any butter or bread crumbs, and I used skim milk, it still turned out fantastic. I guess there's enough oil in the cheese to make up for any lack of grease. Easy and delicious, though not the lightest of veggie dishes.
