The Real Mojito

Reviewed: Jun. 27, 2011
Pretty much the same as my recipe, although I make them a bit differently. I muddle the lime, mint and 3 tsp simple syrup in a cocktail shaker, then pour over ice and add a shot glass of Myers rum and fill with club soda. Perfect every time.

Panzanella Salad

Reviewed: Jun. 23, 2011
This was delicious. I used a seeded artisan bread and other than leaving out the green olives and cheese, pretty much followed the recipe. I did add roasted red pepper instead of the olives. Will definitely make again.

Three Cheese Macaroni with Tomatoes

Reviewed: May 31, 2011
My family liked this dish. I liked that it was easy to make, no white sauce to prepare. The only comments were that they thought there was a bit too much tomatoes, I would use half a can next time. I also used basil instead of oregano. It also is a tiny bit dry, I would maybe add just a bit of milk. But a very good base recipe, we'll make it again.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: May 9, 2011
This was delicious! I used 2 lbs of boneless chicken thighs and seasoned them well with salt, pepper, onion powder and paprika. The guys ate every bite of it - huge hit with them. I didn't add the butter since I used the thighs and next time I'll try it with the breasts to keep it a bit healthier. Really good, will certainly make this many times because it's so very easy.

Swiss Chicken Casserole II

Reviewed: Apr. 12, 2011
This was very good. I made a few changes - I dusted the chicken in flour seasoned with salt, pepper, onion powder and paprika and then browned lightly in a bit of oil. i also added 1/4 cup of white wine to the soup. I used an oven-proof skillet and just topped with the lid and popped into the oven. I only baked for 30 minutes since I had already browned the chicken. Topped with freshly parsley and we really enjoyed it - will make again.

Burgundy Pork Tenderloin

Reviewed: Jan. 21, 2011
Five stars because the boys loved it. I did use 1 cup beef broth and 1 cup red wine. I seasoned the tenderloin and browned it, sprinkled mushrooms over the top and then baked it. I used 2 pkgs of gravy mix. Very good.

Bacon Cheddar Deviled Eggs

Eggcellent! I used shredded parmesan instead of the cheddar and added a generous dollop of Cholula and a bit more mayo. Really delicious, will make again.

Buffalo Style Chicken Pizza

Reviewed: Aug. 4, 2010
This was just okay for us. I used ranch as the guys don't like bleu cheese. I think my issue with it is that it's very one dimensional. It reminded me more of a Hot Pocket. My 22 year old son really liked it, my husband and I were just okay with it. Not sure I'd make it again.

The Best Steak Marinade

Reviewed: Jul. 22, 2010
This is a delicious marinade. I used it on top sirloin & vegetable kebabs. I used reduced sodium soy sauce and left out the balsamic as my husband isn't a fan. I just added a bit more of the other ingredients to compensate. I also added onion powder and a few red pepper flakes and left out the salt. This will be our new marinade, so easy. Thanks for the recipe.

Margaritas

We love this recipe - we make it at least 3-4 times per month. We make a double batch and take it to the pool in a pitcher and keep it in the cooler. Great drink, thanks for the recipe.

Summer Beer II

Reviewed: Jul. 19, 2010
I really didn't love this - it was too sweet and the pink lemonade was just weird for me. I do like the idea, I think I will try it again, but use limeaid. Thanks for the recipe.

BLT Dip

Reviewed: Jul. 19, 2010
I changed this up a bit. I felt it was a bit bland, so I added green onion and 1/2 package of Hidden Valley dry ranch mix. Added 1/2 cup grated asiago cheese as well and topped with more green onion and diced Campari tomatoes. Everyone loved it.

Blackberry Cobbler II

Delicious cobbler. I used fresh blueberries from a local farm and the family just loved it. Couldn't be easier, will make again. I did cut the sugar back a bit as well.

Mushroom Orzo

Reviewed: Jul. 27, 2009
I didn't follow the directions very well, but we loved this idea. I sauteed the mushrooms and onion in 1 tbsp oil, added garlic and then deglazed with about 1/4 cup white wine. I used 14 oz chicken stock and 1 cup orzo, covered and simmered for 7 minutes and then added the parsley, cheese and a splash of fat free cream. This is my husbands new favorite side, big compliment coming from him. I've made this 3 times already. Thanks for the recipe!

Stuffed and Wrapped Chicken Breast

Reviewed: Apr. 27, 2009
I've been making a similar recipe from another site for years, it's one of my favorites. I just use cream cheese, more green onion and add about 1/8 tsp of minced garlic. This mix can just be plopped right on top of the chicken. Then instead of pre-cooking the bacon, it can be cut into thirds and just layered on top the cream cheese mix. I sprinkle paprika on top for color and a few grinds of cracked black pepper. The bacon will turn out crisp. Bake at 375 for 30 minutes and serve with a fresh tomato and pasta side. I do love the idea of the red pepper in this and I will try it. And with all those calories, this is a special occasion dish for us! Edit to update - My husband thinks this is a bit bland, so I coated the chicken in Frank's Hot sauce before adding just a tiny bit of the cream cheese mixture on his chicken. Topped with strips of bacon and baked. Very good this way.

Angel Chicken Pasta

Very good. I use cream of mushroom soup and I can never find cream cheese with chives, so I just use plain and add green onions. Nice and creamy, great with a glass of Chard.

Hey, how did Bob get my recipe? Kidding, but this is identical to our family recipe that I've used for years, except I never measure anything! Delicious.

Marinated Grilled Shrimp

Reviewed: Jun. 25, 2008
I was pleasantly surprised by this dish. I didn't expect much flavor from the mild ingredients. I made very few changes - I used white wine vinegar and I added about a half teaspoon of Old Bay. DH really liked these, I think this was his favorite recipe so far. Very nice for such simple ingredients. Oh, I did cut back on the oil. This will go on regular rotation, I will up the cayenne next time. I think it could use a bit more heat. I think a good quality tomato puree would be good in this as well. Thanks for a good, solid recipe.
