Sweet Potato Pie II

I have made this sweet potato pie 4 times. Followed the recipe, made no alterations or substitutions and the pies were great. Am no longer making pumpkin pie as this is so much better.

Screaming Potatoes

These were quite good. I took the lid off and let my skillet go dry for the last 5-10 minutes, this crisped up the skins a little.

Oven Roasted Red Potatoes and Asparagus

Great combination. Potatoes were good but the asparagus was over cooked. 10 - 15 minutes total cooking time for the asparagus is probably long enough. Also would leave the asparagus spears whole next time.

Mashed Potato Salad

Great recipe. I used all red potatoes and omitted the butter. Think I like this better than regular potato salad and it is much faster to prepare as you don't have to wait for the potatoes to chill.

Honey Brie Spread

Baked brie is just good no matter what you do to it. I used a large wedge of cheese as my store didn't have any rounds. I baked it in a small casserole, topped with the honey and pecans. Omitted the dough part altogether...was still great.

Corn and Black Bean Salad

Vinegar flavor was just a little strong. Think next time I will add some chopped onion, tomato, or red pepper..But this is certainly a recipe to try...easy to adapt to your own taste.

Yeast Pancakes

These are the best pancakes...even better if you substitute brown sugar for white and use 1/2 whole wheat flour. I added chopped nuts and wheat germ. Next time will try blue berries. Recipe made a lot, but the left over batter kept well refrigerated until the next day.

Roast Chicken with Thyme and Onions

Great taste. We don't use butter and the chicken was fine without it. Didn't know what was meant by "line with thyme sprigs" so I tucked some under the skin and put more inside with the lemon.

White Bean Dip

Great stuff...a dip that tastes great and is not full of saturated fat. Try it with pita bread that has been cut into triangles and baked with herbs until crisp.

Liked the salad, but did not like the dressing at all. 3T of mustard combined with 3T of salad dressings & brown sugar is not a mixture I'm going to try again.

Christmas Casserole Cookies I

I would make these again. They're pretty good for the little effort required. Dough was crusty on the outside and gooey on the inside when it came out of the oven, but it all stirred together to form a sort of crumbly mixture. It is certainly easier to roll into balls if you wait until the dough is completely cool. I had a sticky mess when I started too soon and found it much easier when I followed the directions and waited for it to cool.

Amish Slaw

Peach Pie the Old Fashioned Two Crust Way

A great pie. I used fresh, ripe peaches and made my own crust. I did not use the lemon juice. Other than that, I followed the recipe exactly and the pie was great.

Tex-Mex Tuna Salad

Just OK! These were as quick and easy to make as Tuna Helper and the result was tastier. Good for a quick meal and probably good for you too, however the end result is a tuna taco and that's just not great. Be sure the tuna is very well drained.

Coconut Pie

I wish I could give this pie 4 1/2 stars. It's the easiest pie I ever made. Took it to a dish to pass dinner and it was gone before I got a piece. From all reports it tasted great. "Like a Mounds bar without the chocolate". I did toast the coconut before adding it to the recipe and I baked the pie for about 40 minutes before it was done. I would take off 1/2 Star for appearance. It just doesn't make a great presentation. I'll certainly make this again, probably the next dinner as I still have the other 1/2 of the bag of coconut to use.
