Coconut Pie

I wish I could give this pie 4 1/2 stars. It's the easiest pie I ever made. Took it to a dish to pass dinner and it was gone before I got a piece. From all reports it tasted great. "Like a Mounds bar without the chocolate". I did toast the coconut before adding it to the recipe and I baked the pie for about 40 minutes before it was done. I would take off 1/2 Star for appearance. It just doesn't make a great presentation. I'll certainly make this again, probably the next dinner as I still have the other 1/2 of the bag of coconut to use.

Cheddar Baked Olives

I served these warm and they were not very good. Had sort of a soft doughy- gummy texture. The leftovers were better cold the next day, crisp, crunchy and tasty. If I make these again I would serve them cold. Recipe only made 24 olives

Sweet Potato Pie II

I have made this sweet potato pie 4 times. Followed the recipe, made no alterations or substitutions and the pies were great. Am no longer making pumpkin pie as this is so much better.

Calico Bean Casserole

This is a good basic recipe for an easy dish to take to a pot luck dinner. Just pour it into a crock pot to keep warm and it travels well. I cut the amount of sugar in 1/2 and always add a can of drained, cut green beans. Think you can use almost any combination of beans you have on hand and it is still good.

Slow Cooker Stuffing

Very good. Omitted the mushrooms and used 50% cornbread. The 4 1/2 Cups of broth called for in the recipe was just the right amount.

Duo-Chocolate Fudge

Easy to make and tastes good, but not as rich and chocolate as I hoped. I could not cut it into nice neat squares. The pieces tended to crumble and look messy.

Grandma's Secret Pie Crust

OK, I just must admit this is a better pie crust recipe than the one I have been using for 40 years. It is also very easy to handle. Made an ample amount for 3 single crusts.

Peach Pie the Old Fashioned Two Crust Way

A great pie. I used fresh, ripe peaches and made my own crust. I did not use the lemon juice. Other than that, I followed the recipe exactly and the pie was great.

Mustard and Veggie Pasta Salad

Garlic Chicken

This is so simple, good, and pretty good for you. Also works well with skinless chicken thighs, just cook a little longer ( 5 - 10 min. )

Corn and Black Bean Salad

Vinegar flavor was just a little strong. Think next time I will add some chopped onion, tomato, or red pepper..But this is certainly a recipe to try...easy to adapt to your own taste.

Mashed Potato Salad

Great recipe. I used all red potatoes and omitted the butter. Think I like this better than regular potato salad and it is much faster to prepare as you don't have to wait for the potatoes to chill.

White Bean Dip

Great stuff...a dip that tastes great and is not full of saturated fat. Try it with pita bread that has been cut into triangles and baked with herbs until crisp.
