Beet, Orange and Apple Salad

Reviewed: May 18, 2005
I used only one apple, and half the amount of garlic. I would cut the orange slices in half next time I make it - and double the amount of dressing to have extra. The greens were "dry" with the dressing only on the fruits. Excellent yummy salad full of great antioxidants.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 24, 2006
Super yummy. I will use fresh rosemary next time - the dried ended up reminding me of picking fish bones out of my food. I used twice the amount of broth (used veggie) and did this in the crockpot - one hour on high, three hours low. Loved it! Used apple chicken sausage.

Geez - could this be any easier? Now that I know how easy it is, I'll be making crepes all the dang time!

Refried Beans Without the Refry

Reviewed: Aug. 17, 2010
Oh yum! And no worries of BPA in my food from the canned version. Made the following alterations: used 1/2 black beans as others stated, and only used 8 cups of water by accident, but that was plenty. Also used a whole jalapeno. Next time I will add more seasonings. These are incredible and I can't wait to try with other beans!

Pleasant Pork Chops

Reviewed: Mar. 8, 2012
These were super easy and very yummy. I used smoked spicy paprika that I purchased at our local spice shop. This would be excellent over rice.

Baked Scallops

Reviewed: Nov. 8, 2008
Very yummy. Mine also turned somewhat soggy. I used the dredge in butter then shake in a bag method. I think I would cut the butter by about 1/2. That seemed to be the trouble with my recipe. This would also make it healthier. I didn't have onion powder on hand, and they definitely needed it. Too sweet without.

Asian Salmon

Reviewed: Nov. 6, 2008
This recipe just wasn't for me. I used Sockeye Salmon, and would have preferred to stick to my old standby. I have tried many versions of Asian Salmon, and just don't like the flavor. However, I cam giving this recipe four stars because it does turn out quite well. I didn't add ginger but would next time. I also broiled the fish towards the end and boiled down the marinade to thicken slightly. For those that feel the fish doesn't soak up enough flavor, marinade it flesh down - not skin down, so the marinade permeates the flesh. Then flip it before cooking.

Healing Cabbage Soup

Reviewed: Oct. 29, 2008
This does have a very good flavor. I did add a bit of soy for a more salty flavor, and kale for some greens. I think it would be good with some grains added as well, maybe barley or rice.

Best Marinara Sauce Yet

Reviewed: Oct. 16, 2008
This was very easy, yummy, and tasted quite healthy. Of course you can make all of your own additions to it, such as sauteed onions, celery, mushrooms, etc, as well as customize your spices. I like crushed red pepper in my sauces. I'm a huge fan of Paul Newman's marinara and sauces, so I'd love to try to copy Sockarooni! I made it with white wine this time, but will do red wine next time, which just seems to make more sense with a red sauce. I also used fire roasted crushed tomatoes as my local health food store didn't have stewed!?

Roasted Beets 'n' Sweets

Reviewed: Oct. 16, 2008
I made this for a healthy lunch we do at work, and I'm still not sure how I feel about it. It included 3 of the ten vegetables that Dr. Weil highlighted in an article. I think I am just having a hard time getting past how I usually eat beets and sweets. The recipe was easy to make and turned out very good, but I think I would sub something else for garlic powder next time, maybe cayenne?

Very good and relatively easy. Needed a bit more spice/seasoning for my taste.

We thought this was good, but won't be filing the recipe. It didn't wow us, and we have other meatloaf recipes we enjoy more.

Egg and Cheese Puffs

Reviewed: Jan. 4, 2009
Very good and easy to make. I used about half the called for butter, but will also leave it out next time. I think they will be better and not as moist without the butter. I used green peppers and ham as substitutes.

Chili Rellenos Casserole

Reviewed: Jan. 14, 2008
Best on changes that other talked about (not a lot of milk, less cheese, one more egg, used salsa instead of tomato sauce) this was very tasty. I also used the smaller pan. It still came out thin. I might double the recipe next time.

Too Much Chocolate Cake

Reviewed: Mar. 7, 2009
This was really good for a chocolate fix, and easy to make. Would love to try it with ground chili pepper to give it a kick. The only downside are the artificial ingredients in the cake/pudding mixes. Bummer.

Pretty darn good. I would leave out the butter next time, as it made some of the meat really "greasy".

Sweet Potato Pie I

Reviewed: Nov. 24, 2006
I was glad I read the other reviews that said this would be "soupy" before pouring into pie dish. A few things I would change for next time - use a deep dish pie crust. I had to fill two pie crusts to use all the filling. I would cut down on sugar - about a half cup maybe. Very good pie!

Pasta de Sardine

Reviewed: Nov. 23, 2006
This was easy to make and very basic, a great way to incorporate this healthy fish into your diet. We used sardines in cayenne olive oil - next time I would use the tomato sauce ones. My bf loved it. I just can't get past the potent sardine smell. But I ate it - and the flavor was not bad. I added some garlic salt and lots of red pepper flakes.

Roasted Red Pepper Cream Sauce

Reviewed: Sep. 22, 2006
yes, this ends up somewhat lumpy, but it's still a good sauce. I might try using a mortar to smush the pepper even more next time. Omit the butter, not needed IMO. I also add some cayenne to the cream mixture as it's thickening. To easily peel the peppers, slice them down the length of it on one side - then open and flatten the entire pepper skin side up on your cutting board. Scrape your knife blade down the length of the pepper and the skin will easily come off.

Baked Fried Eggplant

Reviewed: Sep. 22, 2006
I think you would need to use the yogurt or sour cream so this recipe doesn't taste so dry. I tried both and the yogurt ones were better. To spice it up, I added Durkee Six-Pepper blend to the bread crumbs, and a few shakes of hot sauce to the egg mixture. Serve up with marinade, or with melted cheese.
