Beet, Orange and Apple Salad

I used only one apple, and half the amount of garlic. I would cut the orange slices in half next time I make it - and double the amount of dressing to have extra. The greens were "dry" with the dressing only on the fruits. Excellent yummy salad full of great antioxidants.

Red Cabbage

Way to vinegary for me. I would cut the vinegar in half next time and maybe double the brown sugar - as I noticed on other recipes.

Chicken Tequila Fettuccini

I followed this recipe almost to a T, and we found it to be extremely bland. It also required a bit of work, so I was diappointed. I did follow one review and made more of the chicken stock/tequila paste. We found it so dull we even added cayenne to try and pump up the flavor.

Pasta de Sardine

This was easy to make and very basic, a great way to incorporate this healthy fish into your diet. We used sardines in cayenne olive oil - next time I would use the tomato sauce ones. My bf loved it. I just can't get past the potent sardine smell. But I ate it - and the flavor was not bad. I added some garlic salt and lots of red pepper flakes.

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

This was good, average. The sauce was indeed very light, and I even cut down on the broth. I would recommend reducing the broth more before adding the cheese. The cheese melts quickly and becomes very thin when mixed with the broth. I made mine with chicken as well.

Big Soft Ginger Cookies

I was disappointed in these and surprised by all the great reviews. Followed the recipe to a t, until the cooking time. Even at baking for 10 minutes and resting for 5, they were mushy and greasy and I had a hard time getting them off the pan. I cooked the second set/sheet for 15 minutes, rest for 5, and this seemed to work better. I found the cookies to be very greasy. I think this is where the soft comes in, too much butter. I have a recipe for ginger cookies from my local spice shop that I will stick with.

Pleasant Pork Chops

Roasted Duck

Best Marinara Sauce Yet

This was very easy, yummy, and tasted quite healthy. Of course you can make all of your own additions to it, such as sauteed onions, celery, mushrooms, etc, as well as customize your spices. I like crushed red pepper in my sauces. I'm a huge fan of Paul Newman's marinara and sauces, so I'd love to try to copy Sockarooni! I made it with white wine this time, but will do red wine next time, which just seems to make more sense with a red sauce. I also used fire roasted crushed tomatoes as my local health food store didn't have stewed!?

Creamy Corn Chowder

I wasn't as impressed with this recipe, though I did love the trick of using tofu in place of cream! I used poblanos in place of green peppers, roasting them first. I also used fresh corn, and used water in place of the liquid that would have come from canned. This may have altered the taste. I just wasn't crazy about it. Also - if you like your soups more stew-like, don't puree as much - only puree about a cup or so to havea chunkier soup.

Chewy Chocolate Chip Oatmeal Cookies

Wow. This is the first batch of cookies I've ever had to throw out. I don't know what went wrong. I followed the recipe to a t. After 12 minutes they really didn't look done. I let them cool 5 minutes on the sheet as the recipe stated, and then I couldn't even get them off the cookie sheet. I tried putting one sheet back in the oven to see if cooking longer would solve the problem, nope.

Awesome Sausage, Apple and Cranberry Stuffing

Super yummy. I will use fresh rosemary next time - the dried ended up reminding me of picking fish bones out of my food. I used twice the amount of broth (used veggie) and did this in the crockpot - one hour on high, three hours low. Loved it! Used apple chicken sausage.

Baked Fried Eggplant

I think you would need to use the yogurt or sour cream so this recipe doesn't taste so dry. I tried both and the yogurt ones were better. To spice it up, I added Durkee Six-Pepper blend to the bread crumbs, and a few shakes of hot sauce to the egg mixture. Serve up with marinade, or with melted cheese.

Refried Beans Without the Refry

Oh yum! And no worries of BPA in my food from the canned version. Made the following alterations: used 1/2 black beans as others stated, and only used 8 cups of water by accident, but that was plenty. Also used a whole jalapeno. Next time I will add more seasonings. These are incredible and I can't wait to try with other beans!

Too Much Chocolate Cake

This was really good for a chocolate fix, and easy to make. Would love to try it with ground chili pepper to give it a kick. The only downside are the artificial ingredients in the cake/pudding mixes. Bummer.

Egg and Cheese Puffs

Very good and easy to make. I used about half the called for butter, but will also leave it out next time. I think they will be better and not as moist without the butter. I used green peppers and ham as substitutes.

Beef Tenderloin With Roasted Shallots

I did not use this recipe for the tenderloin, but for the roasted shallot sauce. I didn't have bacon. I used other reviewers' advice to make the port/broth first, and blend, then I added the pan drippings to the saucepan and brought to a boil. One thing to be mindful of; I thought my sauce seemed too thin, so kept boiling it off. When it sat for a bit on the meat and cooled, it thickened up; almost too thick. So a thinner sauce will be fine. Think of it as au jus! It will thicken as it cools. I also cut down on the butter by about half, so also flour accordingly.
