Beet, Orange and Apple Salad

I used only one apple, and half the amount of garlic. I would cut the orange slices in half next time I make it - and double the amount of dressing to have extra. The greens were "dry" with the dressing only on the fruits. Excellent yummy salad full of great antioxidants.

Red Cabbage

Way to vinegary for me. I would cut the vinegar in half next time and maybe double the brown sugar - as I noticed on other recipes.

Baked Fried Eggplant

I think you would need to use the yogurt or sour cream so this recipe doesn't taste so dry. I tried both and the yogurt ones were better. To spice it up, I added Durkee Six-Pepper blend to the bread crumbs, and a few shakes of hot sauce to the egg mixture. Serve up with marinade, or with melted cheese.

Roasted Red Pepper Cream Sauce

yes, this ends up somewhat lumpy, but it's still a good sauce. I might try using a mortar to smush the pepper even more next time. Omit the butter, not needed IMO. I also add some cayenne to the cream mixture as it's thickening. To easily peel the peppers, slice them down the length of it on one side - then open and flatten the entire pepper skin side up on your cutting board. Scrape your knife blade down the length of the pepper and the skin will easily come off.

Pasta de Sardine

This was easy to make and very basic, a great way to incorporate this healthy fish into your diet. We used sardines in cayenne olive oil - next time I would use the tomato sauce ones. My bf loved it. I just can't get past the potent sardine smell. But I ate it - and the flavor was not bad. I added some garlic salt and lots of red pepper flakes.

Sweet Potato Pie I

I was glad I read the other reviews that said this would be "soupy" before pouring into pie dish. A few things I would change for next time - use a deep dish pie crust. I had to fill two pie crusts to use all the filling. I would cut down on sugar - about a half cup maybe. Very good pie!

Awesome Sausage, Apple and Cranberry Stuffing

Super yummy. I will use fresh rosemary next time - the dried ended up reminding me of picking fish bones out of my food. I used twice the amount of broth (used veggie) and did this in the crockpot - one hour on high, three hours low. Loved it! Used apple chicken sausage.

Amazing Pork Tenderloin in the Slow Cooker

I really disliked this recipe. I would not make it again. But to those who do, I would leave out the red wine. It really can give an off-putting taste to the dish. The tenderness of the pork was perfect however. We will use leftovers for bbq pork sandwiches.

Raspberry and Almond Shortbread Thumbprints

I was disappointed in these cookies. I followed the recipe exactly, with the exception of chilling the dough slightly as per other reviewers' recommendation. They spread out into large cookies, rather than retaining their shape, and in my opinion, were just flavorless and not very good. I also had to cook them a bit longer to get them to "golden". I won't make again.

Health Nut Oatmeal Cookies

These cookies didn't do too much for me. Kind of bland and boring. Maybe with some dried fruit they would be better. I appreciate the attempt at being healthy - and the hazelnuts were a nice twist. I just didn't enjoy them, neither did my fiance.

Chili Rellenos Casserole

Best on changes that other talked about (not a lot of milk, less cheese, one more egg, used salsa instead of tomato sauce) this was very tasty. I also used the smaller pan. It still came out thin. I might double the recipe next time.

Chewy Chocolate Chip Oatmeal Cookies

Wow. This is the first batch of cookies I've ever had to throw out. I don't know what went wrong. I followed the recipe to a t. After 12 minutes they really didn't look done. I let them cool 5 minutes on the sheet as the recipe stated, and then I couldn't even get them off the cookie sheet. I tried putting one sheet back in the oven to see if cooking longer would solve the problem, nope.

Creamy Corn Chowder

I wasn't as impressed with this recipe, though I did love the trick of using tofu in place of cream! I used poblanos in place of green peppers, roasting them first. I also used fresh corn, and used water in place of the liquid that would have come from canned. This may have altered the taste. I just wasn't crazy about it. Also - if you like your soups more stew-like, don't puree as much - only puree about a cup or so to havea chunkier soup.

Roasted Beets 'n' Sweets

I made this for a healthy lunch we do at work, and I'm still not sure how I feel about it. It included 3 of the ten vegetables that Dr. Weil highlighted in an article. I think I am just having a hard time getting past how I usually eat beets and sweets. The recipe was easy to make and turned out very good, but I think I would sub something else for garlic powder next time, maybe cayenne?

Best Marinara Sauce Yet

This was very easy, yummy, and tasted quite healthy. Of course you can make all of your own additions to it, such as sauteed onions, celery, mushrooms, etc, as well as customize your spices. I like crushed red pepper in my sauces. I'm a huge fan of Paul Newman's marinara and sauces, so I'd love to try to copy Sockarooni! I made it with white wine this time, but will do red wine next time, which just seems to make more sense with a red sauce. I also used fire roasted crushed tomatoes as my local health food store didn't have stewed!?
