Kris' Amazing Shredded Mexican Beef

You really do have to watch the amount of chipotle peppers because the taste of the sauce from the canned chipotle peppers can overwhelm everything else. I cut the recipe in half and used only 1/4 of the can of peppers. I may just have not quite liked the brand of peppers I used. Good one to try.

Spicy Garlic Lime Chicken

Excellent recipe. I used the spice blend as listed, 1 tsp garlic powder and the full amount of lime juice and oils. I will cut the oil in half the next time I make it.

An excellent, very flexible recipe. I ended up with a "stoup" with not enough liquid, so I added another can of chicken broth and another can of water. You may want to add more tomato sauce after this, but I thought the broth was fine with out more. I cooked the pasta in the soup rather than separately which resulted in almost too soft pasta. Probably should have stayed with the recipe on that one! I will be making this again. Thanks!

Baked Teriyaki Chicken

This recipe was good as a base to build on. I ended up using a mix of 6 tablespoons dark brown sugar and 2 tablespoons honey instead of white sugar and using rice wine vinegar rather than apple cider vinegar. I also cut the soy sauce to 6 tablespoons. As far as the preparation was concerned, I blended the soy sauce and sugars and brought them to a simmer. I created a slurry of 2 Tablespoons cornstarch and 1/4 cup cold water and dumped it into the simmering soy sauce and sugars. It thickened up nicely and turned out to be an excellent sauce over boneless skinless chicken breasts.

Curry Stand Chicken Tikka Masala Sauce

This was an excellent masala. Even with the recommended amount of cayenne there was still enough kick. I might bump it up at a later time. Not a hard recipe to make. This is a keeper.

Spicy Indian (Gujarati) Green Beans

Like others, I didn't have the black mustard seed on hand so I used 1 teaspoon of mustard powder and 1/2 tsp cayenne pepper. Turned out very well. Next time I will try and track down the exact spices. It was very good as I made it, but I know with the exact spices mentioned it would be even better.

Zucchini Patties

I performed the recipe as written exactly. They were very good, but would benefit from some Italian seasoning or seasoned breadcrumbs like others have suggested. I made a triple recipe and used six eggs. I probably should have gone with only 4 or 5. The consistency was more like a frittata. I will definitely play with this recipe to get a drier crisper product. They are best on the first day when they are crisp, but still very edible on subsequent days. Thanks for the recipe!
