Split Pea Soup
I like the consistency of this soup, reminds me of how my mom made it. I did a simplified version: rinsed, but didn't soak the peas, sauteed the onions for a bit before adding the peas, 8 cups of water, spices, and part chicken/part beef bouillon (I lessened the amount of salt). Boiled then simmered 1 1/2 hours and the peas were quite broken down. Added carrots and boiled/simmered for another half hour and it was done in two hours! Also I added some hot sauce for an extra kick since split pea soup can have a monotone flavor, and also due to me not having potatoes or celery.

Plum Bread
I did 2/3 of the recipe and it was just enough batter for a regular 1.5qt bread pan. I also just blended up frozen prune plums instead of the baby food, and it didn't mess up the consistency by making it too watery. The flavor is really nice, I liked the combination with the lemon icing. It also has just the right amount of spices. Definitely a recipe I will refer back to when I feel the need to use up more of my prunes!

Pile it into a tomato half, load it into a wrap, or spread it on bread. Chicken salad does it all.
