Banana Cake II

Just made this for a birthday request. Good cake overall. I used 1 c milk, and only 1 cup of sugar, half being brown sugar to add more flavor. I feel like the cake was a little less fluffy than I wouldve liked, maybe add 1 1/4 c milk next time? Or skip sifting the flour? Either way, made a cream cheese frosting with 1 container cream cheese, 1 tbsp vanilla bean paste, 1/2 c powdered sugar and 1 c heavy cream. very delicious! Topped it all with coconut shredded and pecan pieces.

Marshmallow Fondant

This recipe ive used for both my very first and my second times making fondant. I found it fairly simple, slightly tedious as far as the powdered sugar process. My best advice: always ALWAYS buy an extra bag of powdered sugar, use shortening, not butter, and smear your hands and counter with shortening; I spent about 20 minutes trying to get it off my hands and back into the bowl! All in all, great recipe. Just a tip, if you want to color it, and youve already rolled it out, it doesnt work so well, so id suggest coloring it while your stirring the marshmallows that are nice and hot, or make a new batch :-)

Lemon Poppy Seed Muffins I

Followed the recipe to a T, even after reading the reviews. I like alot of poppyseeds in my muffins so I was excited to make this one, seeing all the comments on "way too many seeds!". The result was 12 flat muffins, however. They did not puff up in the oven. In fact, they werent super smooth either. Leaveners werent expired, fresh flour, fresh products...Not very impressed. I will keep looking.

Best Chocolate Chip Cookies

Tried these because of rave reviews. Followed suggestions to add 1/4 tsp cream of tartar, substitute 1 tsp extra vanilla for water, and use 2 1/4 c flour instead. Baked at 350 for 11 minutes. They turned out pretty ok, the taste was kind of off. Make sure to use a high quality chocolate chip, mine tasted just ok with a store brand. They flattened out more than id like, not ery crispy, mostly chewy. I love crispy so ill keep looking.

Banana Banana Bread

I used this recipe because I couldnt find my grandfathers famous banana bread recipe he has been making just about every month for probably decades now. This was a fair substitute :-). I didnt add anything extra, except cinnamon, and I used brown sugar, only 1/3 of a cup. I had 9 bananas so I added an extra egg and an extra cup of flour. I did use twice the ammount of butter, but they came out so moist and delicious. Nicely browned on top. Will add coconut next time.

Beth's Spicy Oatmeal Raisin Cookies

This recipe is almost the same as the one on the oatmeal box except for the fact that you add cloves, and this recipe calls for 1/2 cup more butter/shortening than does the quaker recipe. The quaker recipe has been my fall back for YEARS and everytime I make it people love it. Add some coconut to it to make it good. I always put a little extra vanilla and cinnamon, but try omitting 1/2 c shortening and see if they turn out better (those who has spreading/greasy issues)

Almond Biscotti

I had to use about a cup of extra flour for the dough to become more of a dough and less of a cake batter :-) But other than that, they turned out great! I used a coffee bean grinder to crush up the almonds, then I crushed up some white chocolate chips in there, and added some extra cinnamon. They came out wonderful! A side note : Before you place the loaves on the pan, spray with cooking spray! The milk got under the bread as I was brushing it, and the sugar caused it to bake to the foil :-0!
