West Indian Curried Chicken
Agree with most people. Two table spoons of salt seems too much. Also, some of my potatoes ended up coming out harder than others. Cut them evenly but perhaps a little too big. I'd recommend half-boiling the potatoes prior to mixing them in with the chicken to make sure they're nice and tender.

Green Chile Spinach Quiche
My coworkers loved this recipe! I on the other hand thought it was a little bland. I had to douse it with hot sauce to give it additional flavor. I would recommend adding maybe some ground beef or chicken in it for flavor.

Sweet and Sour Chicken I
I liked it. Make sure you don't just glob the cornstarch into the sauce. Mix it with water prior and ease it in. The sauce will be typical corn starch "gel" consistency, but tastes just like the stuff from the Chinese restaurants!
