Chicken Tequila Fettuccini

I read reviews and decided to go ahead and make adjustments. I added a teaspoon of more minced jalapenos. Instead of soy, I seasoned diced chicken with lime juice, and a home mexican blend of spices. I braised the chicken using a cast iron in the oven. I also used beef stock instead of chicken stock and added white wine vinegar. I added about 1/2 cup of parm cheese to the mix. I gave my family some crushed red pepper flakes and Emeril's Southwest seasoning to add to their plates as desired. While I made a huge meal for my family of 4, there was barely any left! Even with the extra spices I added, my 7 and 12 year old loved it.

The Best Potato Salad

The best potato salad recipe! My friends beg me to make it. I think using red potatoes and chilling in the fridge after boiling was key to making this great. I also loved using the peperoncini.

Salsa Chicken Burrito Filling

Loved this! Great healthy option versus ground beef. My kids tore it up. I have a family of 4 that tend to eat large servings. So I doubled this recipe and had plenty. I also tried to do this stove top but like others, I recommend using the crockpot. It was not easy to shred the chicken so I took them out of the sauce when they were done and shredded them by hand when they were cool. Crockpot would've been much easier.

Chef John's Italian Meatballs

I've made this twice now and it's a big hit. Kudos to Chef John for a meatball recipe that is great as is or adjustable according to your wants. For me, I used only ground beef, half the salt (not because of flavor but because of health concerns in our family), and made my own italian season blend and also omitted the parsley. The blend I used 3/4 teaspoon of oregano and 1/4 basil. I also doubled the onion and garlic and sauteed them together. I added 1/2 teaspoon of garlic powder and 1/2 teaspoon of onion powder. You really can't go wrong...this is a great recipe the way it's written or if you want to play with it!
