Curried Coconut Chicken

Holley Moses but this was fantastic! My husband loves curry and he said "this is gourmet"! I mostly stuck to the base recipe, but did add some veggies and stuff. These were my changes: I took the advice of another reviewer an cooked the curry powder in the oil longer - for about 5 minutes, and I cooked the onion and garlic for about 10 minutes. I did not use any tomato sauce, only had tomato paste. I buy it in a squeeze bag (live overseas) so I did about one turn of the pan -maybe 4 tablespoons, and used only abt half the sugar called for. Also added "a dash" of tumeric, garam masala and ground coriander seed. I set a 20 minute timer and at that point added in a sliced carrot, 4 stalks of sliced celery, and half each of sliced red and green bell pepper. 5 min before it was done I added about half a pound of pre cooked frozen shrimp that I thawed in warm water. Turned off the stove and just covered it and let it sit for 5. Served with white rice cooked in the cooker, but I dissolved a chicken bullion cube into the cooking water. Had some warm Arabic bread to go with it. Absolutely wonderful. This one is a keeper for sure!
