Banana Bran Muffins

Reviewed: Jan. 11, 2012
Okay so I did my best to make these sort of healthier. I didn't look at any reviews before baking these so sorry if I'm repeating anything anyone has said. I think I got these down to about 80 calories per muffin, 24 muffins per batch. These are my revisions: Instead of 1/2c of butter: I used about 1/4c of butter and filled the rest of the measuring cup with plain greek yogurt. Instead of 1/2c of brown sugar: I used 1/4c of brown sugar and 1-1/2 tbls of organic honey. Instead of reg milk I used almond milk. Instead of 1-1/2c of white flour: I used 1c whole wheat flour, 1/2c of white flour. I only used 1/3c of wheat bran. I don’t like it that much but know its good for me so I had to use some. I used 4 medium bananas. Oh yeah I whisked the eggs really well before adding, then I folded them in. They turned out moist, yummy, kinda fluffy, and overall good. I would make them again. My 3 year old daughter likes them.

Janet's Rich Banana Bread

Reviewed: May 26, 2011
I made this tonight and it turned out DELICIOUS. I made a few modifications as I had to use what ingredients I had on hand. I used low fat vanilla yogurt instead of sour cream, brown sugar instead of white, half butter / half applesauce, and I used 3 bananas. Oh yeah I added dark chocolate chips. Eating right now as I type - SO GOOD!!

Easter Eggs

These turned out delish! I was tired of dunking the eggs in the chocolate so I decided to pour the chocolate over the eggs and that worked out well and was even faster.

This was really good. I used brown rice and it tastes great! Would def make again. I didn't change the recipe at all except for using brown instead of white rice.

Best Whole Wheat Chocolate Chippers

Reviewed: May 12, 2010
These were pretty darn good. I cut the recipe in half. I used half butter/half applesauce instead of a whole cup of butter. And I omitted the white sugar all together. And I only used 1cup chocolate chips. I will make these again and I hope these freeze well.. I'll leave an updated review after I freeze them.

Easy Whole Wheat Peanut Butter Cookies

Reviewed: Apr. 26, 2010
These are so yummy!! I used half of the butter suggested and for the the other half I used applesauce. I used all natural peanut butter. These were soft cookies. Oh YEAH! I sifted more than half of the wheat flour.. I got lazy and didn't feel like sifting the rest. These cookies freeze good also!

Easy Lasagna II

Reviewed: Sep. 2, 2009
I rarely follow a recipe to the T but I did this time. It was sooo easy to make and the clean up was soooo easy. I'm huge on clean up because I hate it so much. I prepared this in probably 10-15 minutes. And last but not least the taste was really, really good. I was hesitant to use cottage but I had to use the ingredients on hand - it turned out awesome! And the pickiest eater EVER - my husband LOVE LOVE LOVED it. We were both really suprised at how much he liked it. I also even forgot to add onion and garlic and it turned out well. Oh yeah I also preboiled my noodles a little and still added water. I probably won't add the water next time.

I thought this was excellent. I tried making this a slight more healthier by using 1/2c wheat flour & 1/2c white flower, and 1/2 brown sugar and 1/2 white sugar. My guests loved it too! I also used 4 mini baking dishes for this.. so goooooood!!!
