Mediterranean Stuffed Swordfish

I was so glad to come across this recipe. I was looking for something new and different and this was it! The only thing I may try next time is to mix the feta cheese in with the spinach before stuffing the fish, but it was deliciouis the way it was. My kids (ages 8, 4, and 2) ate it like it was the best thing they ever had! Definatly a keeper!

Oatmeal Pancakes II

These were really good. I pulsed the dry ingredients in the food processor first before adding the wet. At first I thought they were not going to be very sweet, but once we added the syrup they were perfect. I think any sweeter and it would have been too sweet. I also realized I forgot the oil after I had already cooked most of the batter, it really did not need it. I cooked them on a nonstick griddle pan and they were perfect, it really did not need the oil, even better that made them a little healthier! Overall very good!!!!

Eggless Crepes

These were really good. I did not have eggs so I was looking for an egg-less crepe. I used vanilla almond milk and followed the recipe. I used cream cheese mixed with a little bit of sugar to sweeten it to fill the crepes once they were cooked. My husband couldn't get enough! Thanks for posting the recipe!

Glazed Yeast Doughnuts

Good recipe. I was a Navy cook for 8 years and we had a similar recipe. This is a very easy recipe. The dough itself is not very sweet, which can be nice so they are not too sweet. I also added a little bit of sugar with the yeast and water to allow the yeast to activate a little faster. My kids and I had a lot of fun rolling and cutting these out. Will make again. I covered mine with melted chocolate and powdered sugar! They were really good!

Mini Pumpkin Butterscotch Muffins

Let me just say, these are amazing! The only issue I had was the chips sticking to the pan. I should have let them cool a little bit longer before taking them out of the pan, but I just could not wait!!! The smell of these baking filled the whole house with yummy smells!!!!!!! One the second batch that I made I ran out of pumpkin, so I used sour cream to make up the difference (about 1 tbsp) and they were even better, if that is possible!

Pumpkin Ginger Cupcakes

These were so good! I did find the crystallized ginger in the Asian section of my grocery store. I think it added a nice flavor and a nice garnish on top. I love these. I also made a cream cheese frosting for the top that just made these perfect. They are sweet, but the cream cheese frosting really helps to mellow out the sweetness and compliments the pumpkin perfectly. Will make these again!

Golden Pumpkin Rolls

My mom had a similar recipe, but lost it a long time ago. These were so good I am going to make them again!!!! I did not have any ginger, or ground cloves, so I used pumpkin pie spice instead. They were a big hit.

Grill Dough

Really good. I used 1/2 whole wheat and 1/2 unbleached AP flour. Took me a few minutes to figure out how hot I needed the grill and all. I topped it with a fresh homemade pesto made with basil, spinach, toasted almonds, garlic, parmesan, and olive oil as well as thinly sliced grilled chicken and mozzarella cheese. I will be making this one again!

Peanut Butter Cup Cookies

Let me tell you, these are addictive, make with extreem caution! They are so good. I made them for a bake sale for the church where the proceeds went to fight childhood hunger, they were sold within minutes, people who bought them wated to come back for more!

Creamy Rice Pudding

I made it a little different. I did not have any white rice, so I used instand brown rice, just put it in with the milk. I also only had skim milk so I needed to add just a little bit of corn starch mixed with water (slurry). I also did not use raisins, do not like them. I added cinnamon and nugmeg. Was a very good recipie, deifinatly will use again.

The Best Rolled Sugar Cookies

These cookies were great! They were soft and buttery. Everything I wanted in a sugar cookie. I frosted them with a cream cheese frosting and they were to die for! Will use this again and again!

Cream Cheese Frosting

I made this frosting for some Christmas cookies. It came out very fluffy and smooth! It has a great flavor and was very easy to make. I will definatly make this again!
