Baked Buffalo Wings

I followed the recipe pretty closely. I did have to put my own twist on it. I did bake my wings on top of a cooling rack to keep the juices from making them soggy. It was really good. I will have to make again and try some different flavors next time!

Pumpkin Ginger Cupcakes

These were so good! I did find the crystallized ginger in the Asian section of my grocery store. I think it added a nice flavor and a nice garnish on top. I love these. I also made a cream cheese frosting for the top that just made these perfect. They are sweet, but the cream cheese frosting really helps to mellow out the sweetness and compliments the pumpkin perfectly. Will make these again!

Savory Corn Muffins

This was really good, but I did use about 1/4 cup of sugar instead of the called for 1 tbsp. I like a sweeter batter. I also added jalapeno to half of them for those that like spicy. The only issue I had is the batter was very runny, but it still was pretty good.

Oatmeal Pancakes II

These were really good. I pulsed the dry ingredients in the food processor first before adding the wet. At first I thought they were not going to be very sweet, but once we added the syrup they were perfect. I think any sweeter and it would have been too sweet. I also realized I forgot the oil after I had already cooked most of the batter, it really did not need it. I cooked them on a nonstick griddle pan and they were perfect, it really did not need the oil, even better that made them a little healthier! Overall very good!!!!

Scrumptious Frosted Fudgy Brownies

I followed this recipe to the letter. I thought it would produce a nice fudgy brownie. Boy was I wrong. I have always been good at cooking and baking, but these just burnt around the edges, formed a crust on top and never cooked in the middle. It was like a brownie cake on the outside with fudge sauce in the middle. I even baked them more than twice the amount of time suggested thinking that they might finally set. The batter had a great flavor, but in the end it was a waste of ingredients. They ended up not being edible at all. I was really disappointed as they smelled so good as they were baking. This is the first time I have ever given a bad mark to any of the recipes I have used on this site. Normally I have much success. All I can think is that I must have done something wrong or something just totally went amiss with this one.

Cinnamon Mini-Muffins

I thought these were okay, but was not all that impressed. I think that this is a great basic recipe, but I was not crazy about the spice mixture in the muffins. Cinnamon muffins should have some cinnamon in them, not just on top!

Mini Pumpkin Butterscotch Muffins

Let me just say, these are amazing! The only issue I had was the chips sticking to the pan. I should have let them cool a little bit longer before taking them out of the pan, but I just could not wait!!! The smell of these baking filled the whole house with yummy smells!!!!!!! One the second batch that I made I ran out of pumpkin, so I used sour cream to make up the difference (about 1 tbsp) and they were even better, if that is possible!

The Best Rolled Sugar Cookies

These cookies were great! They were soft and buttery. Everything I wanted in a sugar cookie. I frosted them with a cream cheese frosting and they were to die for! Will use this again and again!

Pork Chalupas

Really good! I made half of the recipe and had plenty to feed my family of 5 and still have leftovers for another night. It had a great flavor and I love that there was very little extra salt in this dish. Using the dry beans they came out perfect! Will defiantly make again.

Slow Cooker Coq Au Vin

This recipe is good, but not great. I did make some changes to try to give it some more flavor. I used sliced portabello mushrooms, onion, rosemary, and I also added some cooked bacon that I had leftover. The wine and soup made a decent sauce, but I did have to also add some garlic and a little bit of salt and pepper. I used a decent merlot that I had about 1/2 a bottle left over. I also waited until about the last 30 minutes before adding the cornstarch to make it thicker, just be sure you mix the cornstarch into cold water before adding to the hot liquid. I think I will make this again, but only after making a few more changes. I do not think I would use the golden mushroom soup. I will have to see what else I can come up with.

Eggless Crepes

These were really good. I did not have eggs so I was looking for an egg-less crepe. I used vanilla almond milk and followed the recipe. I used cream cheese mixed with a little bit of sugar to sweeten it to fill the crepes once they were cooked. My husband couldn't get enough! Thanks for posting the recipe!

Grill Dough

Really good. I used 1/2 whole wheat and 1/2 unbleached AP flour. Took me a few minutes to figure out how hot I needed the grill and all. I topped it with a fresh homemade pesto made with basil, spinach, toasted almonds, garlic, parmesan, and olive oil as well as thinly sliced grilled chicken and mozzarella cheese. I will be making this one again!

Black Bean and Couscous Salad

It may have been better but I did not have red wine vinegar so I used apple cider vinegar. I really did not like the dressing by itself, it was missing something. Once mixed in with the salad it was better (the sweetness of the corn helped) I used leftover grilled corn-on-the-cob that I had taken off the cob. I also was out of black beans so I used red beans. I did add some Mrs. Dash Mediterranean seasoning and that seemed to help as well. I think it needs a little more tweaking and then it defiantly would be 5 stars.

Sopapilla Cheesecake Dessert

Let me just say, this was outstanding! I made it for a dinner at our church and there was not even a crumb left. I ended up having to give the recipe to everyone. It was so easy and so good. I be making this one again!
