Spanish Potato Omelet

My friend from Barcelona taught me how to make this 2 months ago & I've made it for my family 5 times since - my 2 kids & my "meat loving" husband love this & if have it for dinner w/o meat, everyone is happy. My friend taught me a time saving trick for busy moms that does not change the flavor - she cooks the sliced potatoes w/ the onion & olive oil in a glass pyrex dish in the microwave for 7 minutes or so, or until they're tender. I have a newborn baby & less time, and found a great bag of frozen hash browns at Trader Joe's, no ingredients other than potatoes; I throw the bag in the microwave for 5 minutes with the onion, olive oil, salt/pepper (uncovered in a glass pyrex dish). Then cook the omelette with 7 eggs, use plenty of oil for when you flip it. So good at room temp., better than hot. No other additions. YUM!

Janet's Rich Banana Bread

Thank you! Wonderful, super moist bread, I followed naples34102 tips. Was looking for a high fiber mini-muffin recipe for my daughter & a way to use very 5 over-ripe bananas. I doubled the recipe, which made 2 trays of mini muffins to freeze & a big loaf of bread. I added reconstituted raisins & shredded 1/2 a bag of baby carrots (tossed those & the walnuts w/ flour so they don't sink) & used white-whole-wheat flour from trader joe's. Also, I had no sour cream & needed to use some ricotta up; fortunately that worked really well! I just added a bit of milk to that & finally some apple sauce, as the mix was a tad think w/ all the crazy additions. VERY DELICIOUS. thanks!

Salsa Chicken

We had this for the 1st time tonight, so good, thanks! Picky kids ate it up. I used a whole tub of 'fresh' salsa from the store (not a jar); this was the 1st time I cooked w/ that versus the jar & it was way better than my usual "salsa surprise" meal that my husband doesn't exactly rave about. We loved this though & will definitely make again! I made homemade taco seasoning & probably used closer to 6 or 7 teaspoons & added a t. of flour to that, shook it in a bag with the chicken per other reviews. Thanks!

Chicken Cordon Bleu I

Wonderful! Beautiful presentation on rice & much easier than I thought it would be to make...company worthy for sure. Not many baked boneless chicken dishes come out great in my oven, this was perfect though (I'm used to marinating & grilling chicken). My husband hates ham so I marinated large strips of red bell pepper in a balsamic vinaigrette I made for a few hours, rolled that with provolone slices & fresh chopped parsley w/ the chicken. I liked the suggestions to put the crumbs on a plate & roll that way. Thanks.

Chef John's Stuffed Peppers

Reminds me of my nana's! Wonderful. I just omitted the cayenne & red pepper flakes, & parboiled the peppers for 5 minutes before stuffing & only had to bake 1/2 hour. Did not use sausage either. Thank you!

Thank you! I used coconut oil cooking spray; they were better than any diner in our NYC neighborhood! My kids loved them for dinner last night, & heated up for breakfast this morning (microwaved the cooked leftovers):)

Slow Cooker Carnitas

SO easy & soooo good! Tastes like chipotle's shredded pork. I used 2 pounds of pork loin, the listed amount of seasonings (more salt though, at the end before serving) & 1 cup of broth with 1 T. of lemon juice. Was done in 9 hours. Thank you; my toddlers both love it in cheese quesadillas, with avocados & black beans on the side.

Lemon Blueberry Bread

Easy & Delicious, thank you! I was craving lemon-strawberry bread, so I used those instead of blueberries; no nuts & substituted lemon zest for 4T more lemon juice (bottle) as I had no lemons. I like the glaze a lot, used the regular white sugar the recipe calls for & nuked it for a minute to combine, so it wasn't grainy. The batter was DELICIOUS too:)

Grilled Salmon I

Thank you! I've made this twice in 1 month. I've always grilled fish but live in a NYC apt. now without a grill, so I was searching for a recipe to do in the oven & followed Elizabeth's review from 11/9/07. My husband & I split 1 pound of fish, so I scale back on the marinade proportions a bit & substitute with olive oil & lemon juice. I've only had time to marinate for 30 min. in a bowl, then put fish & marinade in a roomy foil packet in a casserole dish sprayed with PAM. Baked for 13 min. at 425, then opened the foil (covering the more done portions) & broiled 2 min. to finish.The sauce carmalizes on top & is so good spooned onto the fish at the table.Thank you!

Cilantro Lime Catfish

Thanks Cyndi! I was looking for a way to oven bake 1 portion (1/2 pound) of a Turbot Filet; a mild white fish. This was perfect & went GREAT w/ the Zesty Quinoa from this site (though I used cous cous not quinoa); both had cilantro & lime & were a fresh/healthy meal after all the Christmas over-eating:) I scaled the portions to one & then per another reviewer suggestion I mixed the sauce (replacing butter w/ olive oil) & marinated the fish for 15 minutes. Then wrapped it in a foil packet (leaving room for air to cirulate a bit) & baked for 12 minutes, checking it & did another few minutes until it was to my liking. Thanks!

Grandma Ople's Apple Pie

Thank you MOSHASMAMA & Grandma Ople! I have cooked dinners from allrecipes monthly for years, but have only written a handful of reviews; this recipe is fabulous. My mom has an amazing recipe for a apple pie but I couldn't find it & I was daunted to make bake one (it's kind of a lot of work to prep the apples) but this was so worth it! My family picked apples at an orchard last week & the apples were taunting me to make pie - this recipe makes me feel like a Domestic Goddess for making a literal farm to table dessert (we live in NYC).I LOVE how the sauce is poured over the lattice top, it carmalizes on the crust & is FABULOUS. My husband & I were fighting over the crust from the top & that never happens. When making it I didn't have the talent or time to weave the lattice top, I just laid 4 slices of crust down, then laid 5 on top of those, cross-ways. I had to add 1t cinammon (props to my mom) & per other reviewers I added 1t vanilla, a splash of lemon juice & a good pinch of salt...(it's great in salted caramel) the amount of sauce to apples was wonderful. I had a mix of apples on hand & did 5 cups sliced, baked as directed. THANK YOU!

Roasted Brussels Sprouts

Thank you for the recipe, I've never gotten these right before & it's an excellent base recipe. Per reviews I halved the sprouts & blanched for 2 min. in water w/ Lawry's seasoned salt, before roasting added 2 cloves of chopped garlic & a small onion sliced thin, roasted 20 min. I have never seen my 1 year old son eat so many vegetables & am floored that Brussels sprouts are what he finally picked to chow down on!
