Janet's Rich Banana Bread
Thank you! Wonderful, super moist bread, I followed naples34102 tips. Was looking for a high fiber mini-muffin recipe for my daughter & a way to use very 5 over-ripe bananas. I doubled the recipe, which made 2 trays of mini muffins to freeze & a big loaf of bread. I added reconstituted raisins & shredded 1/2 a bag of baby carrots (tossed those & the walnuts w/ flour so they don't sink) & used white-whole-wheat flour from trader joe's. Also, I had no sour cream & needed to use some ricotta up; fortunately that worked really well! I just added a bit of milk to that & finally some apple sauce, as the mix was a tad think w/ all the crazy additions. VERY DELICIOUS. thanks!

Salsa Chicken
We had this for the 1st time tonight, so good, thanks! Picky kids ate it up. I used a whole tub of 'fresh' salsa from the store (not a jar); this was the 1st time I cooked w/ that versus the jar & it was way better than my usual "salsa surprise" meal that my husband doesn't exactly rave about. We loved this though & will definitely make again! I made homemade taco seasoning & probably used closer to 6 or 7 teaspoons & added a t. of flour to that, shook it in a bag with the chicken per other reviews. Thanks!

Chicken Cordon Bleu I
Wonderful! Beautiful presentation on rice & much easier than I thought it would be to worthy for sure. Not many baked boneless chicken dishes come out great in my oven, this was perfect though (I'm used to marinating & grilling chicken). My husband hates ham so I marinated large strips of red bell pepper in a balsamic vinaigrette I made for a few hours, rolled that with provolone slices & fresh chopped parsley w/ the chicken. I liked the suggestions to put the crumbs on a plate & roll that way. Thanks.
