Baked Mushroom Thighs

This was an excellent change from just "grilled' chicken thighs, I only added a dash of minced garlic to the "soup" and a pinch of sage. But only after tasting the soup as it was thickening up to the "gravy stage". Just a personal preference I suppose, the mixture was great for the baking process itself. This is a keeper in my book. Thanks.

Quick and Hearty Asparagus Soup

I'm only giving this a four since I think that using the microwave is not the way to steam your asparagus. I pretty much followed the recipe other than using that method for the steam. Use a standard steamer until the trimmed stalks are tender, and the rest is superb. I think some people don't understand that microwaves vary in power and such, and mess up. Steam the stalks, do the tips as memtioned, and all will be well.

Baked Fish with Shrimp

This was an excellent change from just doing the fish alone. I usually bake my cod or other whitefish with only a lemon-pepper marinade. This was a superb "change of pace" for my week-end. Thanks for the idea and the recipe!

Chicken and Dumplings I

I read the other reviews, and decided to just go with the old stand-by Bisquick dumplings. The rest of the recipe made a very tasty, and little effort dish. So I enjoyed the base, just didn't use the dumpling part.

White Sauce Mix

This is very near the one I found on the back of a "dry milk" container once upon a time. I had lost the measurments, and hadn't done it for years. This is a fine recipe, I also found that I can make it up in multiple amounts, and freeze it in one cup portions in sandwich bags for later! Thanks Again, Clint.

I loved this, I also doubled the shrimp to a full pound, added a splash of white wine, and then served it over Gemelli (had them on hand). Lovely dinner, I think I will add more asparagus next time too! But this is quick and a keeper!

Quick and Easy Clam Chowder

for a "can opener" soup, this is the best I have ever tasted. I told my best bud (who is blind) how to make this since he loves chowders, but really can't "cook" without sight. This was the best, both he and I are pleased beyond words. Thanks for the recipe!

Thai Pork with Peanut Sauce

thanks for a fine, "Thai style" pork chop recipe that is both tasty, and easy to put together. BTW, for those who were put off by the extra coconut milk, this is a clue; put the excess in a small freezer proof container and freeze it. The stuff lasts for about a half a year that way, and if you don't use it in that amount of time it is too bad. I too made a bit more sauce, and I used some cashews instead of the dry roasted peanuts. But that was not for any reason other than I had the one and not the other? Thanks, good stuff. Clint.
