Chantal's New York Cheesecake

I made this cheesecake yesterday and it is absolutely amazing! Everyone who tried some loved it! But you can't leave it in the oven for 5 to 6 hours because it burnt my cheesecake. Not the inside but the top of it was turning black. So I'm baking it again today and I'm going to take it out after an hour and a half maybe two because it was done cooking at 5 and even though I turned the oven off, around 8 the kitchen smelled like something was burning. So today I'm baking another one and hopefully it won't burn a little.
