Mincemeat Crumb Bars
Thanks to my mom's mincemeat cake, I find myself buying marked down jars of mincemeat, after Christmas. But, mom's cake is a lot of work. So, I stumbled across this recipe, looking for a way to use my mincemeat. I like this one a lot! I like how easy it is. I have not made this recipe, as written. I agree with other reviews; the bars are sweet enough, without icing. I also used an entire 27 oz jar of mincemeat, to avoid having leftover mincemeat. I thought the amount was perfect. I used the zest of a lemon, because I didn't have an orange, on hand. I loved the flavor! They are sweet; I wonder if they would be better with a pie crust/shortbread type bottom...something salty to counter the sweet. However, having the same for the crust and crumb topping makes things easy. So, I may never get around to trying a different crust. If you like mincemeat, give these a try!

Vinegar Cookies
Just made these the night before last, and realized that I need to let the world know how good these are! They are truly fantastic. They remind me of Pecan Sandies, only better. I have made them with both walnuts and pecans. I made them with pecans last, because that is what I had on hand. You could also call them 'Butter Pecan Cookies' this way; it sounds a little more appetizing than Vinegar Cookies. I love how this recipe requires only a few ingredients, most of which you will already have. The only cons that I can think of is that the dough can be a little crumbly and dry, so I had to work the dough into flattened balls by hand before putting them on the cookie sheet(but it's worth it). They also seem to cook faster the closer you get to the bottom of the bowl, so I would look in the oven at about 15 minutes. They are also a delicate, crispy cookie, so you need to store carefully if you are going to gift these. These are definitely gift-worthy cookies!

Tiramisu Layer Cake
I didn't know how to add to my previous review....I had to add that you CAN make this the night before. Don't be afraid. This makes the cake even more awesome for me, because I have three kids. To be able to make a cake, in peace, after I put them to bed and it be wonderful the next day is.....a blessing. Enjoy!
