Taco Casserole

My family thought this was really good. I did make a couple of changes - I substituted a jar of salsa for the diced tomatoes and added about 1/4 cup chopped green pepper. I mixed the taco seasoning packet and about 3/4 cup water with the beef mixture (and heated it according to the taco seasoning directions) prior to adding the soup, salsa, and pasta in order to really get the seasoning flavor into the beef. I also used shredded Mexican blend cheese, and mixed about half of the total amount of cheese I used (about 1 cup) into the beef mixture before spooning it into the casserole dish and topping with the remaining cheese. I didn't feel the need to bake it for much longer than 10 to 15 minutes because all you really need to do at that point is melt the cheese since everything is already cooked. Finally, I added crushed tortilla chips just prior to serving to ensure they remained crispy.

Elephant Ears

These were okay. I definitely prefer the ones at the fair...and I personally don't really think these come close enough to that to make me want to make them again. These were a little more dense and slightly less sweet than what my family is used to. Thanks anyway for the idea.

Chocolate Toffee Cookies II

These are great! I've made them several times and they always get rave reviews. I leave out the rum when I make them, and use toffee that I have made rather than the baking bits. Definitely a cookie recipe to try if you haven't already!

Meatball Sandwich

This was absolutely delicious and my husband and I agreed that this recipe is a keeper! I did make a couple of changes per other reviewers' suggestions and my family's own tastes (the changes I made include using 3 teaspoons of Italian seasoning instead of 2, adding 1 teaspoon fresh ground black pepper, adding an extra clove of garlic, using 3 tablespoons of Parmesan cheese instead of 2, and using 2 eggs instead of just 1 egg). I also served these on Hoagie rolls and topped them with shredded Mozzarella cheese. The only other additional comment I wanted to make was that I ended up with 24 meatballs instead of 12 (I thought making only 12 meatballs made the meatballs a little too big for our tastes). Thank you so much for a great meal idea!

Sauteed Apples

These apples are delicious. My husband and I love them for an easy dessert or snack. The hardest (and most time consuming part) of the recipe is the peeling, coring, and slicing of the apples (and it's only time consuming for me since I don't have a gadget that does all that for me). The recipe is very easy to follow. I've never tried it with tart apples, but I've had great results with gala apples and with red delicious - neither is too sweet for my tastes (though some may not prefer things as sweet). I've made this recipe multiple times already and plan on continuing to enjoy it well into the future. Thank you for a fantastic recipe.

Best Toffee Ever - Super Easy

This toffee is super easy and absolutely delicious!!!!! It is exactly what I was looking for. I've made it several times already, including to give as gifts this past Christmas. Everyone I've shared it with has loved it. So far, I've only made half batches (resulting in about 1lb of candy for each batch). Other than that, the only change I've made has been to add a little bit (about 1 teaspoon or so) of pure vanilla extract before cooking. I always prepare the aluminum foil covered baking sheet (and measure out my chocolate chips and almonds) before I start cooking, so I'm free to keep stirring once I start. While the toffee is cooking, I stir it constantly instead of occasionally as the recipe suggests. It doesn't take very long to chill/set - I'll usually let it chill for about 45 minutes to an hour - before breaking it into pieces. Thank you for a fabulous recipe that I intend to make for years to come! I highly recommend this recipe for beginners and experienced candymakers alike.

Tuscan Style Bean Soup

I loved this soup. I agree with the author that this soup is all one needs for a filling (and healthy) meal. I did skip the spinach. Along with other ingredients already listed, I actually added a few additional things to it to make it a little heartier. I used 2 cans of diced tomatoes to make preparation easier, some green beans, 3 cups of shell pasta (instead of 1), green pepper and green onion, some diced chicken breast, and italian seasoning. Instead of using the suggested canned chicken broth, I used approximately 5 cups of chicken broth. I followed others' suggestions and simmered it for about 30-45 minutes. Even my husband who is not normally a big fan of soups thought this was a good recipe. This is an easy to follow recipe with simple ingredients and preparation, and it's good for stretching the grocery budget a little farther.

Cinnamon Butter Cookies

I thought that these cookies provided a nice variation from the standard butter cookie. The delicate cinnamon flavor makes them a very festive holiday cookie. The dough was reasonably easy to work with, though it did soften up before I could finish the half batch I made and I had to briefly return it to the refrigerator before continuing. After rolling them out, I cut them with a small star cookie cutter. I did not make the frosting with it, so I'm not sure how that would have turned out. All in all, very good and will make again.
