Alienated Blueberry Muffins

I'm really disappointed with this recipe. My muffins were really flat and bland. A true blueberry muffin should be high and rounded.

Snow-Capped Cookies

Awesome recipe! As others have said, it's dry, but it's dry in a shortbread kind of way - crumbly and melt-in-your-mouth. Think Pecan Sandies. I don't like white chocolate, so I topped them with shredded coconut and got the same effect. Just great!

Sweet and Savory Kale

I have never eaten kale in my life, but am making an honest effort to put more leafy greens into my diet. I can see where it may be too sweet for some and it wouldn't hurt to cut out a bit of sugar, but I liked it the way it was too. I added a little bit of chopped ham to make it a one dish meal and I was very impressed.

I made this for our German exchange student to make her feel more at home. She said it was better than in Germany! I don't think a compliment gets better than that!

Pork Chop and Cabbage Casserole

Definitely needs more seasoning. With each layer of cabbage & potato, I used salt, pepper and caraway seed as suggested by another. That was good, but the chop itself was still bland. I would use seasoning salt on it next time before frying. Used cream of mushroom soup with milk and topped the end result with sour cream and it was very yummy. It was reminiscent of the foods of my eastern European heritage.

Chocolate Mint Cookies I

I used Andes mints also and they were perfect. I ended up chilling for a day and a half and was worried when the consistency was like a thick fudge. I still went through with them and my daughter said they were the best cookies she's ever tasted in her life. They were that good.

Kielbasa and Potato Bake

This is an excellent, easy recipe. My son is a super picky eater and said it was good! The thing that would have helped me, though, is if the recipe said to let sit about 10 min. after removing from oven to thicken. I topped the leftovers with cheddar cheese which was also yummy!

Bacon Chicken and Dumplings

Absolutely my favorite chicken & dumpling dish, although I did make a few changes. I omitted the corn and used the whole pound of bacon! Instead of half & half, I used one can of evaporated milk plus regular milk to make 3 cups because that's what I had. I also used thigh meat along with the breast meat for a little variation. I don't even look at other chicken & dumpling recipes anymore!
