Cheesy Ham and Hash Brown Casserole
This is a wonderful recipe - Everyone I've made it for just loves it. I have begun a tradition of making it when we are up in the mountains at our cabin - makes the whole place smell so good!!
I do have my own little twist to this recipe to make it a bit more savory/smokey - I add chopped yellow onion (about 1 cup) and a little crumbled bacon in addition to the ham. I also allow the mixture sit overnight before baking so that the flavors have time to really blend and saturate. In the past I've also added a tiny bit of liquid smoke, which works well too.
