T's Sweet Potato Fries

I cut mine like shoestrings and only microwaved for 3 min. I baked for 45 minutes and then broiled them but they never got crispy. They had a good flavor but were mushy. Next time, I will skip the microwave and bake at 400 for longer.

Salmon Pasta Salad

Looking for a dish to use leftover grilled salmon. This was delicious. Dressing is a nice change, light and delicious! Followed recipe except I don't like cucumbers but you easily could sub olive oil or add other veggies like peppers. Always need protein/carb dishes that aren't loaded with fat and calories ~ this fits the bill!!!

Cathy's Banana Bread

The best I have tried and I have tried a lot of recipes. They always turn out dry but this one was perfect. Had to cook a little longer though, about 15 extra minutes. Kept checking center with toothpick to make sure it was done in the middle. Sprinkled pan with cinnamon sugar first which was yummy! Thanks!!

Aunt Carol's Apple Pie

Yummy!! Used red delicious apples because that's what I had. Used regular brown sugar, not the special kind recommended. I will definitely make this again and again. It was a little sweet for me so next time, I will decrease the white sugar in the pie to 3/4 cup. I will leave my apples in big slices too because I like them firm, not soft. Wonderful tasting, very easy recipe!!

Classic She Crab Soup

Excellent tasting crab soup. I'm from South Carolina and very critical of seafood dishes. Substituted canned lump crab since I didn't have fresh crabs. Used clam juice instead of fish stock as recommended in one of the reviews. Quick to make and very tasty!! Served two with lots of leftovers for another day. Thank you!!
