Curried Chicken Soup with Chickpeas and Cauliflower

I left out the cilantro because I'm not a fan, but otherwise this is a tasty soup. I put it through the blender for my friend had her wisdom teeth removed and she thought it was fantastic. This soup is even better the next day : )

Molasses Peanut Butter Crinkles

These are some of the chewiest, tastiest, most delicious cookies I've ever made! I accidentally doubled the ginger and cloves, but it's such a small amount anyways that it didn't seem like a mistake (they were delicious!) I also used about 1/8 to 1/4 cup more molasses than I should have, because that stuff is difficult to work with! I have a new respect for the phrase "as slow as molasses," it's on par with the phrase "herding cats" now for the slow people in my life now. But I digress. These cookies rock!

Red Lentil Curry

Needs more spice, but overall pretty darn tasty. We ate it with pita bread instead of rice. Even my dad hoovered it, and he's notorious for not eating outside his usual.

Smoked Gouda Mac and Cheese

mmmmmm! Creamy, smoky, cheese stringy goodness. I used tri-colour pasta and added some mixed frozen veggies, because that's my idea of "fun". I also kicked it up a bit with paprika and onion salt. The only problem I have is that it might be too rich for me! It's a nice take on a lowbrow recipe with a highbrow ingredient :)

Go Girl Hot Szechwan Chicken

Definitley NOT spicy! Not at all! I used a red and orange pepper because I like their taste moreso than green peppers, and I left out the sherry, but those was the only changes I made. It was more onion flavored than anything. It was basic fare, and I was kind of disappointed.

Caramel Pie II

Best ever! So easy, so good. I filled 24 mini-tart shells, skipped the whipped topping, and they were a hit at the Christmas Eve party. I even have a can leftover for next time!

Strawberry Tarts

The apple glaze was a little weird tasting, but otherwise than that this was an easy way to satisfy my sweet tooth. I used frozen strawberries, which I heated in a saucepan for about 10 minutes on medium; took them out an sliced them, added corn starch to the liquid left in the pan, then added the strawberries again to let thicken. Yum.

Real Italian Calzones

These were great! I used chicken instead of pepperoni, because I think it tastes better and is more healthy. There wasn't enough flour in this recipe though, I had just the amount that it called for and ended up having to use a heap of cornmeal. However, I think this was a good thing, the dough turned out nice and crusty. Thanks for the recipe!

Korean BBQ Chicken Marinade

I didn't have any onion powder, so I used a finley minced small onion instead, along with some fresh garlic. Also, I used Splenda instead of sugar to cut down on carbs. As others did, I marinated but reserved a cup, added cornstarch to that cup and used it as a sauce. This recipe is amazing! A new favourite. Absoultely delicious. Thank you very much!

Savory Tater Tot Casserole

Great idea, but a few additions make it even more tasty! I used vension, which I browned with garlic, celery, 2 cans mushrooms and 1 onion. I added a beef boullion cube and corn starch, which turned it into a tasty gravy. Then, I added frozen peas and let that simmer for about 20 min. After that I followed the given directions, only cooking it for 40 minutes- the whole hour would have made the tater tots more crispy and nice, so that's what I'll do next time. Great comfort food, my boyfriend loves it too!

Gerry's Chicken Enchiladas

Mmm, this recipe was wonderful! However, the corn tortillas didn't play nice- when dipped in the sauce they quickly became too soggy and fell apart, and when not dipped they were too brittle and broke. I suppose in retrospect I could have microwaved 'em, but I instead layered them flat and the dish turned out like a quasi-quesadilla-lasagna type thing. It was great! I took the leftover corn tortillas and cut them into pies, making some corn chips that were instrumental in sopping up the delicious sauce. This recipe is a keeper.
