The Best Lemon Bars

These were delicious. I changed things a little bit, based on other comments from people. Used the juice of 4 lemons, the zest of 1, and added a pinch of salt to the crust. But they were soft, lemony, and very, VERY tasty.

Fast Salmon with a Ginger Glaze

It was very good. We grill quite a bit of salmon, and have our favorite marinades. On a whim, we tried this one, and it was a big hit. My wife isn't a "spicy" lover, so I only used 1 teaspoon of the chili paste. She thought it was just right ... it was a little mild for me. The sweet with the ginger was a nice touch. Did mashed sweet potatoes and steamed broccoli with sourdough bread for sides. We will definitely use this one again.

Slow Cooker Pulled Pork

Made this with A&W from a 2 liter bottle ... did about 1/2 of it for 5 lbs of pork tenderloin. Used Stubb's Original sauce. Turned out very good, although the sauce was a little sweet for my taste. Rest of the family loved it. When it was even better, though, was the next day! Cold, outta the fridge, it was FANTASTIC. I've eaten leftovers for a week, without complaining.

Hot Artichoke and Spinach Dip II

It was good. I substituted sour cream for the mayonaise, but then my kids said it tasted too "sour creamy". We like it, though. Tasted just as good the next day. Ate it the first night with corn chips, the second night with baguette bread.

Cheesy Italian Tortellini

Put this together in the morning. When I came home to check it at lunch, the house smelled wonderful! The pasta needed to cook just a bit longer than the 15 minutes recommended. Easy and yummy. Thanks for sharing.
