Banana Fritters

I just made this for a potluck food sale, and i have to say it is SO GOOD i think i gained 10 pounds while i cooked them because ach one tha didn't look perfect i said "ooh, better eat that one!!" its kinda hard to get the oil the exact right temp for them to fry, they burn so fat if you dont watch it. for those of you who dont like gooey insides, it might not be for you. myself i think the gooey is the best part, after all it IS made with mashed bananas, you cant expect it to be like a cake donut that is dense. After mine were slightly cooled i sprinkled a mix of granulated sugar and cinnamon. I also added more cinnamon and sugar than the batter called for and it was GREAT!!!

Jalapeno Poppers I

I give it 4 stars cuz it needs tweaking to be's what you need to do: after seeding the peppers you must blanche them in salted boiling water for 2 minutes to the cream cheese mixture you need to add a few dashes of tobasco, a sprinling of chili powder and cayenne, some cilantro chopped very very finely, and a few real bacon bits. let the mixture sit for a while before stuffing, the flavours need to mingle you need to use seasoned breadcrumbs, but be sure to dredge them in FLOUR first, or else not enough egg will stick to the peppers, and in turn, not enough breadcrumbs will stick to them either...and do a double coating for extra crispiness! (and less oven leakage of cheese). with these adjustments it is a winning recipe. also, put the stuffed prepared peppers into the fridge for an hour before breading, this also cuts down on leakage because they are firmer. some folks say they arent spicy enoug: this depends on your peppers. some jalapenos are hotten than others, just liek some aples are sweeter than others. if you notice you have a bland batch of ppers when you are sedding them (and belive me, you'll KNOW if you have a spicy batch from the coughing you'll do) save soem of the seeds, or add even more tobasco.

Mini Cheesecakes I

This recipe is AWESOME. i doubled it and used oreo crumbs instead of wafers. i mixed all the abtter and i omitted vanilla extract. whn the batter was smooth i separated it itnto 3 bowls. to one bowl i added 2 tbls of creme de menthe, to the other bowl i added 2 tbls bailey's irish cream, to the last bowl i added 2 tbls Kahluah cofee liquer. i thought that i had maybe ruined the recipe by adding too much liquid, but it was PERFECT. i baked them for exactly 15 mins, they didnt crak and i took tem out right awy. rmeebr, these are just little guys, they dont need to sit in the oven and firm up like a big cheesecake. if you over cook them their creamy texture will disappear! once they cooled, i added melted dark choc to the top of each one and to the kahluah ones i added a choc covered coffee bean, to the mint one si sprinkled crushed candy canes, and to the irish ones i added a green M&M. Oh yes! i almost forgot I used 2 cups of the choc cookie crumbs to which i added 4 tbls melted butter. ALSO: leave your cream cheese out of the friegde for a good 4 hours b4 u start. i put mine beside the water heater to speed things up!! use a MIXER...blend and blend and blend..mix all the cream cheese up until its super silky, THEN add the sugar, THEN after that add each egg one at a time don't just plop it all in together. exxxxxxxxxxcellent.

Angel Icing

Light and elegant. i used it to ice an angel food cake for my firneds wedding shower, then i decorated it with edible sugared flowers. very pretty. the icing is glossy and sinful, but with ZERO FAT! imagine that ladies! it was gobbled up. As a side note, if you like coconut, this also goes GREAT on a coconut layer cake. sprinkle it with toasted shredded coconut and its reminiscent of those toasted cocnut mallow cookies i ate as a kid. enjoy!

Dutch Croquetten

These are really yummy. a good tip is to set the mixture in the fridge, let it firm up a bit and it makes it easier to work with. let them cool down, they are hot!! i dipped mine in spicy mustard, yuuuummy!
