No Bake Chocolate Oatmeal Cookies

The consistency wasn't very cookie-like (I just left them in the fridge because I was afraid they might melt), but it was TASTY as all get out. All these terrible, delicious things mixed into one little ball. Mmm.

Tofu Parmigiana

My pantry is poorly stocked, so I omitted the oregano and basil. I also replaced the mozzarella with Daiya mozzarella-style shreds, which melted quite well (though they don't taste quite the same). Forgot to dunk the tofu in water before coating it, so it only used about half of the bread crumb mixture. Despite all these alterations, I thought it tasted great! The next time I have tofu, I'm definitely going to try this again.

Masala Chai Brownies

Made it without the coconut. I guess I didn't make the chai strong enough, because I can barely taste it - but they're very good brownies nonetheless.

Chocolate Earl Grey Cookies

I made some substitutions - margarine for butter, egg replacer for egg - and I didn't have a coffee grinder, but the cookies turned out wonderfully. I used the advice of other reviewers and only baked 7 minutes. I guess I made my cookies too small, because I ended up with ~60, but all the better for portion control!

Irish Barmbrack

I made some undoubtedly blasphemous substitutions to the recipe, but still quite liked it. Veganized by replacing the egg with 1/3 cup of applesauce; used a weird lemon tea concoction of jam-like consistency instead of marmalade; gave up on the rest of the orange zest when my grater only spat out ~1/4 teaspoon after all my elbow grease. Didn't squeeze out the tea water, as some people suggested - I probably wouldn't have been able to mix it otherwise! The final product has a pretty nice consistency, though the lemon tea mix gives it a slightly strange aftertaste. I'm sure if I had stuck to marmalade, it would be even better!

It wasn't bad, but you can get tired of the strong curry taste very quickly. Maybe it would work better in a smaller portion as a side-dish.

Rapini-Walnut Macaroni

Okay, I may have gone a little substitution-crazy, but the gist of the recipe was still there. Kind of. I was just using what I had on hand, so swapped rapini for gai lan, garlic for onion, and Daiya 'mozzarella' for the parmesan. I wasn't a huge fan of the walnuts (when I tried them before cooking, they weren't sweet enough for my taste), but they complemented the rest of the dish quite well. Next time I'd probably add more of the green veggies, since they were a little bit sparse here. All in all, quite delicious!
