Roasted Red Pepper Cream Sauce

To quote my fiance, "This is incredible!" I used fat-free half & half and jarred red peppers with very good results. I also dissolved some corn starch in the half & half before adding it to help thicken the sauce. I served this over cheese ravioli...yumm. I wouldn't make the recipe as it's listed due to the fat content, but my lower fat version didn't sacrifice the taste at all!! thanks for a great recipe :o)

Mozzarella Chicken

Mexican Cucumber Salad

I didn't have cumin or cilantro, but this was still excellent. I figured my fiance wouldn't care for it because he's not a big vinegar fan, but he ate more of it than I did!! I added a little olive oil, but other than that, I didn't change a thing! Thanks for a tasty and different salad :o)

Mediterranean Stuffed Chicken

I used Italian seasoning instead of dill weed, and rolled the chicken in bread crumbs as other reviewers recommended. Also, I have a ton of roasted peppers to use up, so I blended that into the creamcheese mixture. Delish!

Asian Salad

Very Tasty addition to the Easter buffet! To save time I used 1 1/2 bags cole slaw mix. 1/4 cup olive oil was plenty, and I added one packet of ramen seasoning to the dressing. I had several request for the recipe. This is definitely a keeper! :o)

Summer Style Chicken

Easy, tasty, and healthy!!! Unfortunately, the grocery store was out of zucchini (there must have been a big sale!) so I just used yellow squash, which I sauteed in olive oil and garlic for just a few minutes. This was delicious. Thanks so much :o)

Consomme Pork Chops

I made it as written except I added 1/2 cup of water. I liked it. Hubby said the rice tasted too oniony, but we eat a lot of onions, so I'm not sure what's up with that. He still made a porkchop sandwich out of the leftovers. Thanks!

Paprika Chicken with Sour Cream Gravy

I had to use golden mushroom soup instead of crm of chicken b/c I was out, but it tasted fine and I used the gravy on mashed potatoes (cheddar and green onion). Easy-- would make again!

Honey Mustard Grilled Chicken

Oh my yummy!!!! I used equal parts honey and dijon mustard, and wished I had made a lot more to have some to dip the chicken in!! This was delicious, and the fact that it was so simple made it much better! Thanks for an awesome addition to my grilling recipes! :o)

Zucchini Saute

Delicious! Although next time I think I'll just cook the rice seperately, as it wasn't quite done and the veggies were getting mushy, which didn't bother my fiance, b/c he likes mushy veggies. I didn't have a fresh pepper, so I used jarred roasted red peppers, and it was an excellent substitution! yummy :o)

Pasta e Fagioli II

yum, yum, yum! This soup is great! The only thing I changed was to substitute one large can of crushed tomatoes for the tomato juice. Ditalini are a very small tube pasta, and authentic pasta e fagioli needs to be made using this particular pasta. Barilla brand pasta does make ditalini! I'm sure I'll make this again and again. Thanks for a great recipe! :o)

this was quick and easy, but nothing too special-- it was inexpensive, too. Overall, though, wasn't too flavorful. Maybe would have been better w/ a flavored alfredo sauce.
