Jenny's Grilled Chicken Breasts

Quick and easy...I was planning on grilling this outside but thunderstorms and lightning prevented that! So, I used the George Forman instead. I think this would be better on a real grill, but it was yummy and I served it Zucchini Saute from this site and Cheddar Jalepeno Bread. It was a great, healthy meal! :o)

Acapulco Chicken

Yum, this was delicious! I used red and green peppers and served with tortillas (kind of made fajitas with cheddar cheese and sour cream) but next time I think I'll serve it over white rice. very tasty! Will definately make again :o)

Mexican Cucumber Salad

I didn't have cumin or cilantro, but this was still excellent. I figured my fiance wouldn't care for it because he's not a big vinegar fan, but he ate more of it than I did!! I added a little olive oil, but other than that, I didn't change a thing! Thanks for a tasty and different salad :o)

Summer Style Chicken

Easy, tasty, and healthy!!! Unfortunately, the grocery store was out of zucchini (there must have been a big sale!) so I just used yellow squash, which I sauteed in olive oil and garlic for just a few minutes. This was delicious. Thanks so much :o)

Taco Pie

I'll be making this for years to come!! I made my own taco seasoning mix (from this site, very easy and cost efficient) and added black olives to my half and jalepenos to my fiance's half. Also, I sauteed the ground beef with about a half a can of diced tomatoes w/ jalepeno's and added the rest on top of the beef mixture once it was in the pan. This would be very good with a layer of Mexi-corn, too. If you're planning of having leftovers, leave off the chips, as they get soggy. I love sour cream, but I think next time, I'll just add it once it's on the table. Thanks for an easy, tasty dinner :o)

Famous Butter Chicken

This was tasty...I didn't really see or taste any benefit from using crushed crackers though. I'll probably just go back to using bread crumbs. I pan fry chicken a lot, so it was definately nice to find a good baked chicken recipe. This smelled delicious while cooking :o)

Roasted Red Pepper Cream Sauce

To quote my fiance, "This is incredible!" I used fat-free half & half and jarred red peppers with very good results. I also dissolved some corn starch in the half & half before adding it to help thicken the sauce. I served this over cheese ravioli...yumm. I wouldn't make the recipe as it's listed due to the fat content, but my lower fat version didn't sacrifice the taste at all!! thanks for a great recipe :o)

Grilled Potatoes and Onion

This turned into a fantastic side dish with a couple modifications!! First, I used olive oil rather than butter, and I added zucchini, yellow squash and red peppers!! It was delicious. I recommend the red-skinned potatoes and definately use red onion! I rarely cook with it, but in this recipe, it worked! Thanks for an easy grilling recipe! :o)

Chicken Breasts Pierre

Yummy! I used diced tomatoes instead of stewed and used less chicken so I'd have more sauce. I really enjoyed the way it came out! Tastes great over white rice! :o)

Pasta e Fagioli II

yum, yum, yum! This soup is great! The only thing I changed was to substitute one large can of crushed tomatoes for the tomato juice. Ditalini are a very small tube pasta, and authentic pasta e fagioli needs to be made using this particular pasta. Barilla brand pasta does make ditalini! I'm sure I'll make this again and again. Thanks for a great recipe! :o)

Chicken Enchiladas II

WOW!! These were great. I only used four tortillas, and this meal was fantastic! The creamy sauce was succulent- I served this with Spanish rice (from this site, and not from a mix!-go me!) and Mexi-corn. The man of the house was quite pleased. Thanks for a greeeeaaat recipe! It's a keeper :o)

Quick and Easy Alfredo Sauce

Creamy and delicious! I used low fat cream cheese and used 2% milk and Fat-free coffee creamer (not flavored) and it still tasted great. I mixed in some fresh lump crab meat, served a Caesar salad and garlic bread and had a wonderfully satisfying meal! Who would have thought cream cheese alfredo sauce would taste so yummy? :o)

Garlic Croutons

Yum,Yum,Yum! I used olive oil instead of butter, added extra garlic, threw in some Italian seasoning and some Locatelli Romano cheese and these croutons turned out great! Make sure to flip the croutons while they're cooking. No more boxed croutons for this family :o)

Awesome Slow Cooker Pot Roast

My very first potroast...and it turned out wonderful! I lightly seared the roast before putting in the slow cooker, and substituted beef broth and red wine for the water. I threw in some potatoes and forgot about it! Hours later I came home to a home that smelled delicious and my fiance thought I slaved away all day ;-)
