Garlic Cheddar Chicken

Made this a few nights ago for dinner and it was fabulous! My husband and daughter raved about it, insisting I make it again soon. I used panko bread crumbs and I think this made the extra crunchy texture we love. Other than that, followed the recipe to a T and it was delish!

Creamy Rice Pudding

I had never made rice pudding before, but this was fantastic! Didn't use raisins because daughter doesn't like them, but still came out wonderful…moist and creamy.

Bacon Crackers

Made this for a Super Bowl party and they were the hit of the party! EVERYONE asked for the recipe, and loved that it was soooo easy yet so delicious. I used pita crackers because that was what I had on hand but that made them all the better because they had great crunch and less fat.

Oven Scrambled Eggs

Just made half recipe in a 7 x 11 casserole and everyone loved it. I did add a little sauteed onion and green pepper with a cup of cheddar cheese at the 15 minute mark. Wonderful recipe easy to customize to taste! I'll use this regularly now. Thanks, Erin!

Beef Stew VI

Made this for dinner tonight and we all thought it was the best beef stew we ever had! Per reviewer suggestions, I added the meat to a blend of 1/4 C flour, 1 tsp garlic powder, and 1/2 tsp salt before browning and deglazed with 1/2 C of red wine + 4 C beef broth. Enjoyed it with some garlic bread and a salad - scrumptious!

Lentil Soup

My family loved this hearty, thick soup! Due to what I had on hand, I used 8 C. veg broth in place of water, 15 oz. can diced tomatoes instead of crushed, 1 TB balsamic vinegar, and no spinach. It was wonderful, flavorful, filling, and low-fat! A keeper for sure!

Zucchini 'N' Carrot Coins

Raspberry and Almond Shortbread Thumbprints

Great cookie recipe! Fast and easy to do with a group of Brownie Girl Scouts and they were yummy as well! Very "kid friendly" recipe that tastes great!

Dump Cake II

It was great...everyone at the luncheon I served it at tells me. I didn't get any! My daughter walked in the hours hours after it was gone and said, "Mom, what smells so good!" Too bad, she didn't get any either, so I'll have to make it again soon!

Cream of Asparagus Soup I

Excellent!!! I chose this cream of asparagus recipe to try because it was the lowest in calories and fat with great reviews and now I know why. I followed it exactly except for no soy sauce, half the amount of cream, and used only white pepper. My entire family loved it as well and it was a hit at a recent luncheon. Thanks for such a great recipe! I'll be making this one for many years to come.

No Bake Peanut Butter Pie

Wow!!! This was awesome - sweet but not too rich. However, I only had the 8 inch pie crusts so I cut the ingredients a bit, using 6 oz. low fat cream cheese, 12 0z. Cool Whip lite, 1 1/14 C pwd sugar. I added a thin layer of fudge topping to bottom of crusts as other suggested and topped it off with chopped up peanut butter cups (6 for both pies). This made it both beautiful and delicious. The 8" pie crust is a good choice. The 8 slices are a bit smaller but not too small. Everyone loved it!

Cream Puffs

Delicious and easy recipe! Try this and impress your friends and family! Not too sweet, but just right. The only thing I changed was to add 1 tsp vanilla to cream puff dough. This was my first attempt at cream puffs and they were a huge sucess - everyone loved them.
