Red Skinned Potato Salad

I'm rating this recipe a 5 because I think the bacon makes it wonderful! I added a few "extras" though. I cut the potatoes into bite size pieces before boiling. When potatoes were done I spread them out on a large cookie sheet and sprinkled with some fresh chopped dill and a little red wine vinegar. While they were cooling I mixed 1 cup mayo, 1 cup sour cream, chopped dill pickles, chopped eggs and green onions in a small bowl. When the potatoes cooled I put them in my serving bowl and poured my mayo sour cream mixture over the potatoes and mixed just enought to cover. I kept it in the fridge overnight to let the flavors mesh together and added bacon just before serving. Delish!

Super Squash

I love squash and this is a great way to prepare it. I added some fresh chopped mushrooms and garlic to the onion and squash and a little extra butter. This was a really tasty dish! Will make many times!

Southern Living Magazine's Chicken-Fried Steak

This is my first attempt at chicken fried steak because I usually don't make fried foods, but my son who just returned from Texas requested it so I thought I'd give it a try. I was SO PLEASED with the outcome! This recipe was so easy. Just make sure that you make sure you make the crackers into very FINE cracker crumbs to ensure a great coating! Great recipe!

Bloody Mary Deluxe

I thought this Bloody Mary was AMAZING, but then again nothing is too spicy for me! I left out the carrot, bell pepper, and mint. Franks Red Hot is the BEST for bloody Marys. Only thing I added was a dash of Lawry's Seasoned Salt and a pickle wedge(with a splash of pickle juice). I DO NOT recommend this if you are watching your sodium!

Chicken and Wild Rice Casserole

I made some changes: I browned some cubed chicken breast with onion and fresh garlic. Then I added the curry,some lemon juice, and about half a can of cream of chicken soup to the soup mixture. I also added some garlic salt to the water that my rice was in. Before putting the mixture into the baking dish I added some fresh ground black pepper. Delicious and flavorful!

Angel Hair with Feta and Sun-Dried Tomatoes

This recipe is so wonderful because it takes minimal effort and there are so many things you can add. I added capers, pine nuts and black olives. I have made this a few times and realized that if you feel it is too dry try adding some fresh lemon juice instead of more olive oil. It really blends with the other flavors well and doesn't make it too greasy.

Chicken Cordon Bleu I

There are times when I have problems with chicken drying out so I put a thin layer of mayonnaise on top of the chicken before adding the bread crumbs. I also use this method when I cook fish in the broiler. Works every time!

Amateur's Light Breeze Chicken Chili

I took a chance on this recipe because it sounded spicy and I'm glad I did! It was WONDERFUL! I used real cubed chicken breast(something about meat from a can doesn't sound appealing) and halved the recipe. I used 2 1/2 cans of Rotel tomatoes instead of the stewed(too slimey). I used black beans instead of chili beans, a whole can of sliced jalapenos,1 tablespoon of chili powder, and 1 tablespoon of cumin and the can of chicken broth. I only needed to add about 1/2 cup of water after it had been cooking a while. Although this dish was too spicy for the rest of my family to eat I really enjoyed it! Thanks!

Stuffed Green Peppers I

This recipe is FABULOUS! My kids were a little leary about trying it because they said the meat mixture looked like "dog food", but one bite and they were singing a different tune. I did use feta cheese instead of the chedder because my kids like it better and it was still GREAT!!!

Cream Cheese Ranch Potatoes

These potatoes are DELISH!!!My kids LOVE cheese so I added a step. I cooked the potatoes about 15 min then mashed and added ingredients. Then I transfered to a baking dish and covered with cheddar cheese and put it in a 350F oven for about 10 minutes. It was WONDERFUL!!!! Thank you so much! My kids now say my mashed potatoes are better than grandma's. There is no better compliment!

Easy Meatloaf

The sauce alone makes this recipe fabulous. Next time I will make twice as much. I did add half a package of Lipton Onion soup mix which gave it some extra flavor!

Quick Chili I

This chili was FABULOUS!!!! I made a couple of changes by using a cup of dark beer instead of the water, and for one of the cans of diced tomatoes I used a can of Rotel "chili fixins" diced tomatoes. Topped with some sour cream and cheese and atop white rice this was the best!

Tater Tot Bake

This was a quick and easy recipe, and tasted great! I took some prior advice and mixed the browned meat, soup, and milk together then lined the tater tots on top and topped that with the cheese. It turned out wonderful! My son asked to take the left over in his lunch the next day.
